s/o roadtrip food....camping food?

I'm going to a family reunion that is a 7 hour drive away.  I'm supposed to bring something to eat for the group.  I'm leaning towards desserts.  Outside of rice krispie treats, what else would travel well with little refrigeration?  If not desserts, what else could I make?  Or should I just settle on bringing chips and beer and calling it a day?

  • A pasta salad  would be good. Just throw it all in a sealed tupperware and then put it in the cooler.
  • Are you opposed to bringing a cooler?  You could do fruit and a dip, cut the fruit up when you get there and put the dip in a cool.  Or pineapple skewars could be an option if you don't mind cuting up when you are there.

     Or do chips and premake an onion/sourcreamish dip and only put that in a cooler.

    I like the PP's idea of a pasta salad, that would travel very well.

  • I'm not opposed to a cooler, it's just that our 8 hour trip to get up there is being split into 2 days.  We'll leave here about 6pm one day and won't arrive until about 6pm the following day.  And some of the food is for the day after that.  Eh, I'll just find a store near there and do what was suggested above :)  No sense in traveling with it.

  • I'm trying to figure out what to contribute on a three day/two night camping trip as well. I'm thinking I'm going to bring the typical hot dogs, but I'm also going to cook up taco meat w/ onions and chiles. I figure I'll keep it in a ziploc bag and then put it in foil to warm on the campfire and eat it w/ queso dip and chips.

    You can't fail w/ grapes, bananas, apples, watermelon, etc. Fruit you don't have to refrigerate and can cut up for a fruit salad.

    Bring a bunch of snack bags of doritos, a bag of shredded cheese and shredded lettuce, and some sour cream and wahlah you have walking tacos. We always bring this on our first night of camping cuz it requires no cooking while we set up campers and such.

    ETA:  Screw the vegans - no cheese or doritos or sour cream.  I won't be picking up that lifestyle anytime soon.

    haha... you can also do fritos IF they can do that (no idea) but it's also a build your own so they can take whatever they want or nothing at all?!?!
