Japanese noodles

Ramen is very bad for you, so I thought that I would try to make it healthier. I switched water while I was cooking, added mixed vegetables, and an egg. Delicious. It turned out well enough that I tried to make noodles by myself afterward. Well, they are thick, not to delicious- looking, and I wonder if they will turn straight back to dough when encountering water. Not that I mind much. I like dumplings just as much as I like noodles. However, I would like to be able to make Japanese- style ramen noodles on my own. I have no noodle cutter, or anything like that. I have the ingredients, cutting board, rolling pin, knife, and pizza cutter as my basic noodle making supplies. Any Advise?
