One more food question

How long do you think stuffed peppers are good in the fridge? Or if I make the "stuffing" on Sunday, just not stuff the peppers until I bake them? If I want to freeze some should I freeze the actual stuffed peppers or again, just freeze the stuffing?

Thanks!

Re: One more food question

  • I would just freeze the stuffing, and if possible, freeze in portioned-out chunks.  I can't remember (and I could be wrong), but I don't know if peppers freeze well.

Then again, you can buy frozen pepper strips, can't you?

    Wow, I'm unhelpful.

  • I freeze peppers raw. They cook up fine, but not quite as tasty as fresh. I think I would freeze the stuffing and then get fresh peppers when I'm ready to make them. It seems like something that could go soggy if it's put together too far in advance.
