Who has an awesome stuffed pepper recipe they want to share with me? Big Smile

  • What kind of pepper?  We made stuffed jalapenos last weekend that were very yummy.

  • Yeah - I want an awesome stuffed pepper recipe, too! I've been looking for one for bell peppers but will take anything. :)

  • The ones we make aren't fancy and we kind of improvise...

    green bell peppers (x2) seeded and ready to stuff

    saute onion, garlic in saute pan,we use turkey kielbasa or chicken sausage and chop it and saute w/ onion/garlic... then add in a can of rinsed black beans, a can of crushed tomatoes (about a 14.5 oz can). When that is combined and cooked, about 15 min, add in about a cup of cooked rice.

    Stuff peppers and add in some shredded monterey jack or cheddar or a combo

    Bake at 350 til cheese is melted.
