While at the grocery store I decided to pick up an eggplant. I have no idea why, I have never cooked it before, and probably have only tasted it a few times. Regardless, now I have an eggplant at my house and need to figure out how to cook it and possibly a delicious recipe to use it in. I know there are a lot of master chefs on here, so please share your favorite eggplant recipe.

If you don't have a grill and would roast the eggplant in the oven, I'd add some smoked paprika for that little bit of smokey kick.

I love it fried. Slice it, dip it in egg and then Italian breadcrumbs...YUM.
Roasting it is also yummy--olive oil, salt, pepper and a little cayenne.
I've cubed it and put it with italian sausage, crushed tomatoes, basil, garlic, evoo etc. to slow cook into an italian sauce in a dutch oven
Also, I've stirfried it with tofu and it whatever asian sauce like the peanut sate or an orange sauce
I make Ratatouille with it.
Cut eggplant into chunks
Cut up 2 zucchini's into chunks
Cut a pepper (color of your choice) into chunks
If you like onions, cut one up into chunks
If you like mushrooms, add a container of fresh mushrooms
Heat some olive oil in a pan and add the veggies to it. Let them brown a bit and add about 3 tomatoes (cut into chunks)
Season with a little Montreal Steak Seasoning or if you don't have it then some pepper, salt and garlic powder.
Turn the heat to medium-low and cook covered until veggies are tender, stirring occasionally. So easy and so yummy
