CSA help!

So that was my bounty yesterday!! Today I am feeling a little over whelmed. Where do I start with using all of this stuff? I'm guessing with the tomatoes, peaches, and mini melons. I am working the next 3 days straights so I will be doing little to no cooking after today until Sunday. I dont want anything to go to waste. H will probably use the squash b/c he's back on a diet (ha)  for the next couple of days.

I was thinking about having tomatoes and cucumbers for lunch today. Then making Chicken Kabobs with the green peppers, and onions. Or should I use the corn and green beans first??

  • What you have planned sounds good.  I'd say most of it will last for a while.  Do you all grill a lot?  Our favorite way to cook corn on the cob is to soak it in the husk in cold water and then put it on the grill still in the husk.  It's so good.  I also ran across this corn recipe yesterday on a blog.  It sounds good too.

    Do you get a box every week?  I wish I would've started one this year.

  • I've thought about joining a CSA, but am afraid of taking the plunge.  Good for you for supporting local agriculture!  I recommend slicing and sauteing the squash.  Cook it until it starts to brown on the sides.  Yum!
  • We put sliced squash and zuchinni in foil or on a grill tray after tossing it in olive oil with cracked pepper/salt. So simple, but so good!

    I also love grilled corn on the cob. Every time we try to do it without foil the husks burn. Must be the soaking in water that's the trick. All we do is peel back the husks, remove the string things, rub with butter put some salt/pepper and then wrap the husk back up. Then wrap each one in foil and grill. Not sure on the time for that since H is the griller, but I know it takes longer than most veggies.

    As for the peaches it looks like you have enough to do a cobbler or a tarte if you didn't want to just eat them.

  •  I pick up a full share every other week. I couldn't commit to picking up the same time every week. Every other week is a little more manageable.

    The squash is the least of my concerns. Its one of the few veggies B eats. He usually puts it in foil adds butter or oil, and Montreal steak seasoning. Then tosses it on the grill.

    We had corn the was grilled in its husk at my Ils the other night. It was good. I will probably just boil it and then cut if off the husk to make it easier to eat at work. 

    I think I'm going to do a chicken and green bean casserole tonight. Its easy for me to take to work.
