Lazy Lasagna....If you're interested.

This is a recipe that I've been making for ever, it's super easy and if you let it set up and eat leftovers just like regular lasagna it's even better.

Ingredients

1 package of egg noodles
1 pound of ground beef (or turkey)
1/2 cup chopped onion
1 clove of garlic chopped
1 large can of crushed tomatoes
1/2 teaspoon oregano
1/2 teaspoon basil
1 1/2 cups of ricotta cheese
1/4 cup grated parmesan cheese

Directions:

Brown ground meat with onions garlic and spices with a little olive oil (if you want to use it)  add can of tomatoes simmer for about 5/10 minutes.

Boil noodles till tender. When cooked add noodles and cheese to sauce. You can add salt and pepper if you want and you can add any other spices that you like in your sauce.

See told you easy lazy lasagna.

If you want to be really lazy with it, you can use jar sauce, but I can't bring myself to do it.  I will tell you my measurement might be a little off I was guessing, I just eyeball it, and remember you can always do it to taste.

  • You would substitute the jar sauce for the tomatoes? I'm not a fan of canned tomatoes. Also, no baking? Just stove top and serve?
  • Awesome! You know, our grocery store has freebies all the time (buy x get y free). I always make our sauce too, but got a freebie jar of sauce last month. All I need is ricotta and dinner is served. :)

    You can totally substitute jar sauce for the tomatoes.  It will work fine. And yep it's just stove top and serve, it's a wonderful thing.  It's all the taste without the work.

  • Me too...VIkki, you don't break up the long noodles at all?  I'm just trying to picture scooping the sauce out and having noodles fall off of spoon before getting to my plate...does that not happen with them so long?

    Egg noodles are super short. Just use a spaghetti spoon and you're good.

    Also if you let it cool for a minute or two it will set up a little bit and not be so saucy.  And that's another reason I use canned tomatoes because it's not too saucy.

     

  • Whoops...guess I didn't read the noodles you use...HA!  Here I am thinking you use lasagna noodles...Jeez.
