Chicken breast

So I am trying to figure out what to make for dinner and I have frozen chicken breast. We ALWAYS lemon pepper it on the grill with white rice. I am getting tired of it. What would you do with it? Ideas? Maybe something quick and easy.

    We probably eat chicken breast 5 out of 7 nights a week.  There are soooo many things you can do with it.  Last night it was just me so I cut it into strips, put it in a pan on the stove, some salt and pepper, and then about midway through cooking I poured some BBQ sauce on it and let it crisp up a bit.  It cooks super fast and is easy.  You can always just bake BBQ chicken too.  If you have any veggies, you could always cut the chicken up in chunks, cook it in a pan on the stove with some veggies, add in some evoo, salt, pepper, onion powder, etc.  There's a billion chicken recipes out there, but those are the two fastest/easiest ones that came to mind.

    Fifth Anniversary Combo Breaker

    I loooove making chicken lo mein. So I dice up the chicken breast, toss it in my wok with the noodles, veggies, chopped peanuts and spices.

    Sometimes we add soy sauce, other times I'll add peanut butter sauce, or sweet and sour sauce. Depends on our mood.

  • we too eat a lot of chicken breast maybe just as much as xan! we did chicken stir-fry last night with water chest nuts, bamboo shoots and and some mushrooms and onion, and used some ground ginger and just a few splashes of soy sauce  and some white rice.

    I think my Favorite thing to do with chicken tho is put the breast in the slow cooker for and then shred the meat and add some chunky salsa, then i mix that in to a pan of home made red enchilada sauce and make burritos out of it! yum!

  • We eat alot of chicken breast also: enchiladas, quesadillas, on salads, in macaroni and cheese, with rice and veggies as a stir fry, grilled with this marinade, per MCC's suggestion: chicken, tomato, basil and goat cheese, chicken parmesan, buffalo chikcen sandwiches

  • You can dreadge it in honey mustard (mix honey with regular mustard if you don't have already prepared honey mustard).  Then cover with Panko bread crumbs and bake.  YUM!!
  • Chicken parmesan is quick and easy...

    Or you could just bread and bake it.

    Ashlee has a chicken stuff recipe in the recipe sticky at the top of this board.  I made it last night with peas instead of mushrooms and it was really good!  Enough to freeze some and save for another night, too.
