Help me not be fat - Veggie snacks!

I've found my work day flows better if I have occasionally mini-meals/snacks instead of taking a long break for lunch.  But I'm drawing a blank on a wide enough variety of veggie-based healthy snacks.

My morning snack is a handful of fruit (blueberries today) and plain nonfat yogurt, so I'm gettign off to a good start, but I tend to skew toward cheese, peanut butter and carbs for the rest of them and that's just not gonna cut it unless I wanna be a blob. 

today's healthy snack was mini-carrots and some hummus, which I love and can eat almost every day.   But not every day.  Help?  What do you eat for healthy snacks?

  • damn. I was going to say baby carrots and hummus. I am always eating that.

    I need to work on this too. I like most veggies, but carrots are the only ones I really like to eat raw and are therefore pretty portable.

    have you tried baking kale yet into chips?

  • Do you like peppers? I love eating green peppers fresh.  And cucumber slices.  Zucchini sauted with some spices is really good and you could make it the night before and have it during the day.

  • I know you asked for veggies, but what about some nuts - the protein will keep you feeling full longer. I have almonds as part of my snack, but I measure them out and only eat 1/4 cup. If that's all I bring, then that is all I can eat...

    cooked veggies!  For some reason this is revelatory.  Thank you!  I just had a sandwich the other day that was all cold marinated zucchini and bell peppers and artichokes and it was freakin' awesome.  I could happily eat a pile of those.

    And yeah, I love bell peppers.  And cucumbers.  Both of which would be awesome with alittle yogurt based dip.  Hmmm, excellent.

    I've got a jar of peanut butter and a container of almonds in my desk as my emergency backup snacks.  i know the protien is supposed to make me feel full longer, but I've found that it doesn't really.  It is delicious though.  :)

    I have not yet tried the kale chip thing.  I keep meaning to though.  Good idea.

  • Not exactly veggies, but these are a few of my favorite snacks at work:

    Strawberries mixed into yogurt.  Sometimes I add a little granola.      

    String cheese is great too.  Not to mention it will meet your cheese cravings.

    100 calorie pack of popcorn.

  • Don't keep WHOLE jars of anything! Eat the almonds one at a time and chew it thoroughly. That's the only way I can eat them without swallowing all of them.

    I don't keep pnut butter - I'd eat it by the spoonful.

    LOL...I can understand the danger, but I don't really have a problem with just taking one spoonful of pnut butter, or one handful of almonds and putting it away. 

    My self control is pretty good with those things.

    Potato chips.  Cookies.  Gummy candies.  Not so much.  Almonds?  Yeah, I can back away from the almonds.

  • I buy frozen in-shell edamame, microwave it at night salt it, then put it into small containers and to take to work to eat cold.  It's a veggie, and a protein, so it's a win-win!

    I was going to suggest edamame as well. Sam's actually sells it frozen in single serve microwaveable baggies- if you have a freezer & microwave @ work.

  • I weigh out 1oz of almonds in snack bags and have them in my drawer.  I also have a tub of protein powder and make a protein shake with water midday.  

    I also freeze grapes and love them as a snack.  Do you like cottage cheese?  You can mix some fruit in and it's a high protein/low carb snack.  I also roast chickpeas and bake kale chips with different seasonings and always have those available.
