Menus?

J is gone for two more weeks on TDY and I'm having problems with another menu this week.

Last week I made paninis, an amazing squash and zucchini dish, and a corn and black bean pizza. 

This week I just have Ranch Pasta with Spinach, Bacon and Tomatoes

What is everyone else having?

  • I don't a have a full menu for this week but tonight we're having homemade stroganoff and tomorrow I'm making roasted corn chowder with red pepper.  It's a pretty light recipe...I don't use a ton of cream, just a bit of sour cream.  I puree half the soup and that thickens it up.

  • I don't have my menu all planned out this week. Boo. Anyways tonight we are having cranberry chicken and rice and green beans. At some point this week we will have Brandie's Spicy Honey Glazed Chicken with roasted potatoes because E requested it. I might find some light yummy salads to make for the other nights as we really haven't been eating heavy around here lately just because its warm.

  • We had spaghetti squash marinara last night.  Well, I had spaghetti squash, DH had whole wheat pasta.

    Tonight is a crock pot roast chicken with asparagus and spinach.

    The rest of the week includes pollock, salmon, beef and mushroom stirfry.

  • We're having steak and asparagus, chicken tacos, chili, and turkey burgers so far.  We will probably have a combination of our leftovers one night.  Chili and chicken tacos sound good together to me.

  • Tonight was turkey loaf, we also have plans for a blueberry walnut salad, breakfast for dinner, spaghetti, and tacos.

  • H is gone and I have training every night this week, so my menu plans includes Smart Ones and sandwiches.  

    Normally though my favorite meals to make when he is gone are either a pack of Ready Rice or some pasts, and flavored chicken sausage.  For sauce I use half a cup of light alfredo sauce, and half a can of diced tomatoes.  It's delicious and super easy to make.  If you use Ready Rice it takes about 10 minutes total to make dinner, and if you use pasta it just takes the pasta cooking time.

  • We're having steak one night, with veggies. It's also turned cold here again (sigh) so I think potato soup or chicken noodle soup is in order!

    You are my hero for cooking with a 2 week old! I just now started cooking again, haha. We ate quite a lot of take out those first months.

  • We're being pretty strict because we have weigh in coming up and we're visitng some family this weekend; so we've cut out breads/pastas, sugar/junk and red meats.

    Today - Chicken alfredo made w/quinoa instead of noodles
    Tmr - Probably salmon and some veggies
    Wed - Stir fry of some sort, I have a ton of veggies to use up.
    Thurs - Either left overs or a tilapia dish.
    Fri- we leave to visit family. Eek!

    It hasn't been fabulous meals (lots of boxed stuff) but I'm so over the take out. I've also been taking any free meal that gets offered to us.

  • We're in another gross heat wave so lots of cold stuff, take out and grilling

    Tonight--bacon ranch pasta salad(that I made this morning while it was a little cooler) and sandwiches

    Tomorrow--hot dogs with a garden salad

    Wednesday--I have pt, an eye doctor appointment and I need to go food shopping so probably a pizza or drive thru.

  • Just an FYI ladies, the recipe I posted above that I tried tonight was garbage. I literally spit it out. So disappointing.
