Weekend baking/cooking

Make anything good over the weekend? As usual, if you have a home run, share the recipe, please.

  • Not really that exciting but I made the first caprese salad of the summer - finally found some decent tasting tomatoes. I swear, all the produce is so off this year because of the weird weather. Even our neighbor's peach tree which normally has dozens of peaches on it only has a handful this year! So weird.
  • I made nutella brownies

    I also whipped up some cheesecake bars and then mixed together blackberries, blueberries and strawberries that I got from the farmer's markets and add a little sugar to them and use that as the toppings for the cheesecake bars

    I also made some recipes out of my Clean Eating Magazine.

  • Not quite baking. But I made bacon sliders from PW, homerun. Especially when I tucked in some jalapenos under the bacon before cooking.
  • banana bread.  nothing too fancy.  DH made some chana masala which turned out pretty good...too spicy for me though!
  • This is kind of sad but I discovered a shortcut and a way to use spinach. We had leftover white rice from ordering Chinese food, I shredded cheddar cheese over it and then put a layer of fresh spinach on top. Then I put it in the microwave for 1 minute, instant casserole. Good for those nights you get home from work and are too exhausted to wait for something to cook in the oven. Or when it's too hot to turn the oven on.
  • DH made some fabulous salsa all ingredients fresh from our garden. Fabulous!

    Tomorrow I will be making almond & hazelnut biscotti mmmm.

  • H and I made jambalaya last night in our slow cooker. It needed spicier sausage.

    We did make some reaaaaally good stir fry on Saturday though.
