Switching cat's food

I am looking for some advice or insight from other cat owners...

For the past few years my cat has eaten Fancy Feast wet food, only one can per week, spread out over the weekend. He really just prefers his dry food but I know some wet food is good for him, and he will eat it, if only a little bit at a time. Then I got the kitten and started feeding her a better brand of food (Performatrin). I realize that Fancy Feast is not the best brand so I figure this is a good time to switch him over. Like many cats, he can be so picky... he won't even eat the Fancy Feast unless it's a seafood flavor.

So a couple days ago I put out the new food... he was excited for wet food, but after a few sniffs, he just left it and the kitten ended up finishing it. So yesterday I tried mixing the new food with the old food to try to trick him. He did sniff it for quite a bit longer and even took one lick, then left it again. Should I just keep trying this until he caves? Has anyone had experience with switching their cats food? If he has been perfectly healthy, would you even bother?
