Freezer Meals

I've been working on my freezer meals this week and just thought I'd post what I've made. I know some others were semi-interested in freezer meals, but frustrated with the general unhealthiness of most freezer recipes. I managed to keep these pretty healthy, not 100% clean eating, but with a side salad or fresh veg, pretty healthy. I can post recipes, if someone wants something specific, but these are pretty standard things. I just subsitute healthier ingredients (brown rice, ww tortillas, ff cheese) and add extra veggies. Just thought I'd give some ideas.

Chicken Enchiladas

Chicken Broccoli Rice Bake

Chicken Spaghetti

Turkey Enchiladas

Stuffed Peppers with Turkey

Tortilla Pie with Turkey

I also made 12 twiced baked potatoes that we can eat with a salad or add some meat and make a whole meal. Twiced baked potatoes are suppose to freeze really well. I have high expectation for those.

    Can I have your pot pie recipe please? I've been craving one for a looooong time. Also, I notice you froze stuffed peppers---you think it would be okay for me to freeze cabbage rolls? I love them, but Danny doesn't like cabbage. I usually buy a really tiny cabbage and barely get enough rolls for me. So if I buy a bigger cabbage and freeze the leftovers?? Good idea; bad idea?

  • My pot pie recipe is really simple. It's just shredded chicken, 1 bag frozen mixed veggies, 1 can cr of chicken soup (I use fat-free), and 1 can cr of mushroom (also ff). My mom's crust recipe has a stick of butter, so instead I top it with ff cresent rolls. Not the absolute healthiest recipe, but reasonable.

    I've bough the Stoffer's stuffed peppers before, and they're pretty good. That's why I think stuffed peppers will still be good. I'd suspect the same for cabage rolls. Cabage and spinach seem to freeze well.

  • What do you make your pot pies in? Do you do a large pie or several small ones? I've been trying to figure out a way to do single serving pot pies, but besides an average pie pan, the smallest thing I have are muffin tins....I could do them in my bowls (ceramic dinner ware), but then I have the issue of getting them out of the bowl without tearing them apart. Line with wax paper?

  • Mal- you can freeze stuffed cabbage. I assume youre talking about halupkis? I do it all the time. I also freeze stuffed peppers.

    Awesome. And, yeah, I'm talking halupkis!! Yes to you for using "halupki" in a sentence!!! I've said that before on FB (and most of my friends are regional to me and/or Polish/Czech) and NO ONE knew what I was talking about! My mom had to jump her Czech butt in and set them straight. Wink

    My dad makes halupki all the time, but they get passed out to EVERY family member we have and we never had leftovers. So I've never been faced with the issue of freezing until now. Good to know!

    i usually keep peppers and halupkis for < 3 months. after that they start to get freezer burnt. but i typically make a big batch and freeze a couple in small portion sizes in tupperware.

    then you can either put them in the fridge the night before or put the tupperware dish in a pan of warm water to thaw. then i microwave them. they're nice for a meal for andy or i when the other isnt home.

    High five! And I can't wait to get our new deep freezer. As soon as we do, I'm making halupki like nobody's business!! And now I want haluski for dinner...but alas, I has no cabbage. :(

    I did pot pies for 2 servings and put them in quart sized pages. I thought about doing them in small aluminum pans, but 1) bags take up less space and 2) I decided the crust would be better fresh. I'll just dump them into a 8x8 casserole dish and add the crust before baking. I made 3 bags worth.
