I always forget about quiche.
It is so easy to make. A great way to get veggies in and a great way to use up veggies. And you can make it lower fat...although I don't.
Last night I made one with sweet onions, swiss chard, and summer squash. So good!!

You'll have to enter it in the Egg Festival quiche contest next year - you just missed it for this year.
Funny you say that, I have quiche on tap for next week. I picked up some eggs at the Farmers Market and wanted a good way to use some up! I've never made quiche before but I'm super excited.
Side note:
TL's Wickedlicious may be getting a store in downtown Gardiner! That may help take away the hurt of your bakery leaving.
I love quiche ... and I always forget about it too.
My mom & sister are obsessed with egg white crustless quiches -- they are runny and disgusting (they make it in a 9x13 pan)-- smaller does work better for this. The way they make it though...
we make crustless quiche a lot at work and I'm always like, "mmm, this is delicious, but you know what it needs? CRUST!"...lol...it's my favorite part...I almost don't care what is in the filling, if it has a good crust
