I'm a grown-up and I don't like veggies. Occasionally I eat lettuce, green beans, or asparagus. Anyone have an idea of how I can incorporate more veggies in my diet?

I experiment with cooking them different ways. For instance, I grew up hating sweet potatoes. I always thought of the canned ones with marshmallows at Thanksgiving and just couldn't get past it.
I figured I'd try them on my own and realized that they are great if I cook them different. Now they are one of our favorites.
I think a lot of it is mental, to be honest. You grow up eating certain foods cooked certain ways and that's what sticks with you.
Google a bunch of recipes and see what interests you. If you are partial to Asian food start there and see the various ways you can incorporate different veggies.
