So I want to make cake balls for the first time this weekend and I need help because, obviously, it's my first time. I get the basic recipe, but I have some questions.
1. Which is the best combo of cake and icing flavors to use? I don't want it to be so sweet that you can barely eat one and I don't want them to be all chocolate, covered in chocolate. I also considered using funfetti cake mix, but would that just turn into one big nasty-colored glob?
2. Which is the best chocolate to use for dipping? Recommend a brand that works for you?
3. How long do you let the cake cool before you crumble it? I understand it's supposed to be little warm, but if you had to guess how long do you let it sit?

1. I think you can get away with using a cake/icing combo that you would normally use if you were making a regular cake. If you want to be sure you don't go too sweet, I would suggest a white cake mix and a fun icing . Or you could do something like red velvet cake and a cream cheese frosting.
2. Make sure you using melting chocolate, don't use regular bar chocolate. It will melt better
3. I would let it cool for about an hour then crumble it.

Thanks, Mandah! I was thinking about making some with a white frosting since they'll be dipped in chocolate, but I can't think what would be good with that. I'm only having such a hard time because I am a chocoholic.
Red velvet sounds amazing, but I don't know if everyone would like that.

Bakerella's website is awesome and I think she has a cake ball tutorial. Chocolate cake with peanut butter frosting sounds good, Yellow cake with strawberry frosting, red velvet with cream cheese, carrot cake with cream cheese, yellow cake with chocolate frosting or just plain vanilla frosting. Also, wait until the cake is cool enough to the touch that you can crumble it with your hands and add the frostings and then I would cool it in the freezer instead of the fridge. The cooler the cake, the less likely it will crumble and you will lose crumbs when you dip the cake balls.. hope this helps!
This helps a lot! Except now I'll probably want to make 2 different kinds! The peanut butter and strawberry ones sound awesome.
Okay, first, I pretty much go after the cake about 10 minutes after it is done baking since I have a Kitchenaide Mixer. I just cut the cake into about 8 pieces and throw two at a time into the mixer to crumble it up. Then add the frosting once all the pieces are in there and crumbled. I find if the cake is still pretty hot the frosting melts into it better. I make my cake balls right away, and put them on wax paper on a cookie sheet and put them in the fridge for atleast 4 hours, but overnight preferably.
I also dip mine in almond bark so that it is not so chocolaty and then you can also use sprinkles since it is on white.
