We've been grilling so much lately that I'm kind of stuck in a rut with sides. We always do a vegetable or salad so I'm good there. But we either always do baked potatoes, sliced cheesy potatoes on the grill or a Suddenly Salad cold pasta salad.
Any ideas of other sides we could do?
Re: Grilling rut
toss some zucchini/squash with olive oil, salt, pepper, parmesan cheese and grill
salt/pepper eggplant rounds and grill
grill potatoes- slice them and grill them. toss them in egg whites for a crisp finish before grilling.
tomato/cucumber/red pepper/feta salad
If you're grilling you can always just do baked potatoes on the grill. If not what about brown rice or couscous.
Not to mention I love grilled corn on the cob.

Spice up your salads.
Start using fruits, different cheese or even toss in some pasta.
Grilled corn on the cob is one of my faves!
I would suggest biscuits or cornbread if it weren't so hot. Using the oven is awful these days.
Rice is our go-to.
