What recipe do you use for zucchini fries? I made some last week and thought they were a little under-seasoned and maybe too "meaty," as if I cut them too large, but maybe a difference recipe would explain the process better. They were so-so but need to be better to go into the rotation.

We're just getting back from vacation and into the swing of things again so just having a menu is an accomplishment..
- chicken gyros, rice, cucumber and tomato salad
- soy glazed salmon, rice pilaf, asparagus
- buffalo chicken sandwiches, potato chips, cucumber and tomato salad
- italian sausage and summer veggie pasta
- apricot dijon pork chops, mashed potatoes, green beans
- homemade pizzas, green salad
- pineapple chicken skewers, rice pilaf
I used that recipe too, and I would suggest cutting the zucchini into 5-6 pcs. instead of the listed 4-5. I would also season the flour mixture in addition to the panko mixture. Even with the listed amounts, I found it to be under-seasoned. I wanted the to be SO good. I was really pulling for this recipe. I hope I can tweak it to make it fantastic.
I was going to halve the recipe, but keep the red pepper as is. I first saw baked zucchini fries on Macaroni and Cheesecake. I am going to try those next with Italian beef sandwiches. And I think the Parm cheese would really add to the flavor.

In no particular order:
Pasta with a marinara from Food Network/Giada. It has carrots and celery in it, which I haven't used in marinara. We had it with the Pepperoni Pizza Monkey Bread on Duchess' blog yesterday and it was good.
Red beans, sausage and rice. So tired of this meal, but it is fast, cheap and one of Avery's most favorite meals ever. We'll have it twice.
Waffles/sausage and fruit
Baked ziti using the aforementioned marinara
The marinara is really good. Dh doesn't like the veggies "chunky" so I throw them in the food processor. It's my "go to" marinara...
I thought it was pretty chunky too, so I ran my immersion blender through it a few times. It made a huge difference. I also added some more spices. I plan to add sauteed mushrooms and maybe some ground beef tonight...if I feel like cooking them.
Sun: open face blackened catfish sandwiches & roasted broccoli
Mon: I have a work dinner, leftovers for DH & DH
Tue: shredded beef tacos, corn & black bean salsa
Wed: shredded beef quesadillas, rice
Thu: either more tacos or hot dogs
Fri: something on the road
S- Leftover pasta with sausage and peppers.
M- Tacos, homemade tortillas, guac.
T- Greek chicken, lemon and feta orzo.
W- Red beans and rice.
T- Leftovers
F- Out for date night.
Sunday- Grilled pizzas and Caesar salads.
Monday- Bunco for me, DH is on his own.
Tuesday- Takeout, TBD.
Wednesday- Puffy tacos, rice and beans.
Thursday- Brown sugar balsamic pork tenderloin, creamed corn polenta, zucchini.
Friday- Lemon chicken linguini.
Saturday- out.

I'm not working this week, so I'm going to try to loosely plan for the entire week:
Monday: ultimate veggie burgers with sweet potato fries
Tuesday: Salmon, warm bulgur broccoli salad
Wednesday: Spaghetti & Meatballs, herb roasted carrots, salad
Thursday: Coconut lime chicken thighs, roasted green beans, coconut rice
Friday: pizza (may try PAGAS's parmesan crust)
Saturday: something out
Sunday: crock pot short ribs, potato tomato gratin, salad
I haven't made either before, but here are the recipes I plan on using.
