*Maria/anyone with a pesto recipe
I wasn't super excited about the last few I tried but I have a shitton of basil in the garden that I need to do something with.

Super simple and easy but delicious:
Take a couple large portabello mushrooms (you can take out the stem if you want to, I usually do to make more room inside). In a bowl mix together cream cheese and pesto to taste. Fill mushroom with mixture and BBQ until mushroom is cooked!
ETA: oops, I thought you were looking for recipes that USE pesto, not a recipe for pesto itself. Nevermind....

What are you looking at?
When I'm looking for a good fatty one I use PW's pasta with pesto cream sauce.
I typically add peas and pancetta to it. I have also done it with imitation crab, whole pine nuts and peas.
Ingredients
- 2 cups fresh basil leaves, packed
- 1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts or walnuts (I used walnuts -- they are cheaper)
- 3 medium sized garlic cloves, minced
- Salt and freshly ground black pepper to taste
Procedure1 Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more.
2 Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.
Makes 1 cup.
Serve with pasta, or over baked potatoes, or spread over toasted baguette slices.

What are you looking at?
Throw one avocado, 2-3 cloves of garlic (if you really like garlic!), 1/2 cup parmesan cheese, good handful of basil and olive oil to stick it all together! It's terrific on pasta, and I could just eat it with a spoon.
