Potato Salad Recipe

Anyone have a quick and easy potato salad recipe? It is for the bridal shower the other bridesmaids and myself are hosting Saturday. The less ingredients the better. Wink TIA!

    I don't usually use a recipe really. I will cube potatoes (Yukons usually, I leave the skins on, but you can peel them if you like), boil then under fork tender and drain. Hard boil an egg (for a four serving dish, more if you are making a bigger bowl of it), peel, and dice. Dice up some onion and celery. Mix it all together with some mayo, mustard, and a splash of cider vinegar. More mayo than mustard and just enough vinegar to loosen it up a bit. Salt and pepper. Everything is to taste, really.

  • My MIL uses italian salad dressing (vinegar based, not creamy) and a little mayo. It's really good. I never use a real recipe for potato salad either, I just make it up as I go along, like Jo. Although I generally use scallions or chives rather than onions as I prefer the milder onion flavor.
