just made the best cupcakes!
Rainbow Cupcakes!! I am SO not a baker/cook/any sort of kitchen person at all and I thought this was going to be a huge disaster- especially when the cupcakes were baking and looked huge... just huge! They were kind of a pain to make, but they look so awesome when in the wrapper and you cut into them and see the layers of color... I am so proud of myself. :-)
I used a combo of recipies found online after someone at work brought in leftover cupcakes from her daughter's b-day party and all i could think of was how could you pay $$$$ for them when you could do it yourself? Little did I knwo what I was getting into...lol. All you do it use white cake mix, divide batter evenly and add colors or rainbow, put in like cupcakes (but I think i put too much, although I think it would be too difficult to even out the layers if I had less in each layer- i did a spoonful, possibly a bit more at times and wet my finger when spreading the layers out). Bakes following directions on box and OMG, they looked so good! White frosting like a cloud, but i will bring frosting to the playdate with chocolate too so kids have a choice- I had vanilla frosting...mmmm. :-)
Thought I'd share...
It was a pain to get the food coloring too b/c i tried to get the actual colors instead of mixing but i wasn't sure if you can use icing color or have to use food coloring...anyone know ? I saw at the craft stores a box of all the colors i needed, but it was icing gel coloring- with a coupon it would be a good deal and SO much easier!!!
If anyone does want to try to make them and wants to mix colors let me know and i will give the drop combos for each colors.
