Remember I can't menu plan to save my life.  Wednesday comes and I'm already completely out of ideas.  Help.  Healthy-ish and toddler friendly is always a plus.

  • M is gone so dinners for a little while will not be anything special. I was thinking wine, fruit, and cheese for dinner tonight but PW just posted a new pizza recipe today that looks great. I'm not sure if it's kid friendly but if your DD likes veggies, it might be!

  • Curry chicken salad over some greens, and garlic naan.

    Not sure how toddler friendly that is for you but the site weelicious.com is a favorite among my friends with toddlers.

  • I was going to make chicken taco salad (chicken breast cooked in the crockpot or you could grill it, then shredded over romaine with black beans, corn, cheese and a dollop of sour cream and a warm tortilla) tonight but my mom invited us to come over there for dinner so I'm shelving it until next week.  Tomorrow we're having grilled eggplant and hummus sandwiches on naan and I'm using the leftover eggplant for a Mediterranean pizza on Friday.

  • We're having boneless, skinless chicken thighs basted with bbq sauce, and baked/broiled.  Served with roasted red potatos and roasted red bell peppers, and likely a bit more bbq sauce.  Fruit with yogurt for dessert.  (and maybe some chocolate... it's been a rough week.  I could use some chocolate)

    It's relatively WW friendly, it might fit your definition of "healthy".  (I know way too many people on way too many different diets to keep track of what fits with what diet...)

    I've also got a whole chicken that is going to get cooked ("roasted") in the crock pot tomorrow.  I'll season it, and put it on a "stand" of celery sticks so it won't sit in it's own drippings while it cooks (I'll add a bit of liquid to the crock, but not much), and we'll have it with rice and steamed veggies.  We'll eat some of the breast meat for supper tomorrow, and the carcass will go into the stock pot to make a nice chicken soup for later on.

  • I have a pork tenderloin in the crock pot.  I'm planning on adding bbq sauce and having it with cornbread and steamed broccoli tonight.  I'm hoping it'll last until Friday night when my bff gets into town.  I'm using that as an excuse to eat out all weekend.

  • I think we're doing spaghetti tonight. Something simple that isn't chicken - DS has been eating a ton of chicken lately. I'll try and mix in some spinach, too, and see if he'll eat it.

     Tater tot casserole, I know its not the super healthiest but I do add a ton of veggies to ours so it makes it a little better.

    Here is a recipe for my mac and cheese. I use the lower or reduced fat versions of the  sour cream and cottage cheese. And just use whatever cheese we have in the house and serve with green beans. Whole Wheat or whole grain noodles work well in it too.

    Here is a recipe for String Pie which is kinda like lasagna but far less time consuming and its super yummy!

    I had Chipotle. I was obviously really inspired tonight. lol That and I was all alone and I hate cooking for just me!

    What happened to Rudi?? 

    He had an anxiety attack of epic proportion and self-harmed.  He cracked out half his canine tooth, broke a premolar in half, and broke out another premolar all the way down to the root.  Every single tooth on the left side of his mouth is chipped and/or worn down to a nub.  He also ripped a nail out of his paw.

    Big guy had a very long surgery yesterday to remove the two worst teeth and the root of that premolar that he cracked off and to cauterize his nail.  The root of a canine tooth is twice as long as the tooth itself, so they had to do a lot of digging in his sinus cavity.

    He was so drugged up last night he couldn't stand very long.  He's my shadow, so every time I tried to leave the room he tried to follow me, then collapsed in really uncomfortable positions.  He had to be carried everywhere last night. :-(

    He was coherent enough today to hold himself up long enough to pee and to eat half his breakfast, so he's doing a little better on that front, but of course that means he's feeling more of the pain now.

    I'm glad he's better today, but I hope he isn't in too much pain! Poor puppy!
