recipie help

If you are a follower of my blog and read it you will see that C and I are going to "cut back" on our spending next month. One way were doing so is by eating at home more and this where I need the most help. I need some really good recipie's for breakfast, lunch and dinner. We will be eating leftovers for lunch alot of the time so I want a decent variety so we won't be eating the same things over and over. If you like PM me and I will give you my e-mail and you can get me recipies that way.

  • allrecipes.com is where I find most of the recipes that I end up liking a lot.  I find recipes that have been made a lot and have multiple reviews.  If you have a smart phone, all recipes has an app that will allow you to search for new recipes.  If you end up liking it, you can save it under your favorites tab--I find that whenever I can't think of anything to make, I use it.  It's great!

    One of my trashy velveeta favorites is chicken chili spaghetti.

    I also love this meatloaf:

    1 lb. ground beef

    1 can diced tomatoes

    2 eggs 

    1 pkg stove top dressing (I get the cornbread flavor)

    1 onion, chopped

    ketchup

    Mix it all together, bake at 350 for an hour.  Top it with the ketchup.  It makes really good meatloaf sandwiches for leftovers.

    I also like to make beef enchiladas with cream of crap soup.  I mix a pound of browned ground beef, chopped green chilis, shredded cheese, cream of chicken and a can of enchilada sauce together and then fill tortillas with it.  I top the rolled enchiladas with cheese dip or enchilada sauce, bake at 350 until bubbly and serve with spanish rice.  It's really yummy. 

    Reuben chicken is delicious too--lay out chicken breasts in a pan coated with PAM and top them with a slice of swiss cheese.  Layer sauerkraut on top of that and another slice of cheese.  I also salt and pepper the chicken.  Pour an 8 oz. bottle of Russian dressing (in salad dressing aisle, like catalina kinda) on top of the chicken and bake at 375 for 30-45 min depending on your oven.

  • Can I get the link for your blog?  I haven't been following it, but would like to.

    Here are some of my ideas, you can look up specific recipes on allrecipes to suit your taste.  I'm really bad about just making stuff up that sounds good, so I rarely follow recipes.

    Sometimes when we have grilled chicken I cook extra (minus bbq sauce) and use it for stir fry, quesadillas, fajitas, tacos, chicken salad, etc. another night.  I do the same with the crockpot salsa chicken.  If you make a roast for dinner one night you can chop it up with bbq sauce the next day for sandwiches as lunch.

    Pasta anything is quick and easy, I make it up as I go along usually.  Cook pasta and add in meat (usually chicken for us), veggies and some evoo (or even a bottled sauce, Target has quite the variety of sauces) and seasoning/herbs/spices and call it good.

    We have been buying individually packaged steaks this summer and they're really easy to thaw out what you need and throw on the grill.  I sometimes even cut them up and make fajitas or stir fry with them.  We get the steaks from the steak and poultry plant in Owasso, but maybe Sam's would have individually packaged steaks.

    Pioneer Woman's recipes are usually pretty good and can feed an army, so that would be a great option if you're wanting leftovers.   Also, though it's waaaaay too hot right now, soups, stews and chili are always good leftovers.

    Meanwhile, for an easy breakfast, we do breakfast tacos a lot. They're DH's favorite, and they're super easy.

    Fry up some bacon and/or crumbled sausage

    Scramble some eggs (add a little milk to make them more fluffy), once they're nearly done add cheese until it's melted (and by then eggs will be done). If you used crumbled sausage, mix it in.

    Spoon eggs into a warmed flour tortilla. Place bacon strips on top. Dash of hot sauce if desired. Wrap tortilla. Ignore salivating dog. Eat.

    Katie's Cream Cheese Fajitas (I made this one up a few weeks ago, and it was amazing)

    1 block low fat cream cheese
    1-pound sirloin steak
    1 can/bottle of beer
    1 packet fajita seasoning
    1 onion, sliced
    1 tomato, diced (optional)
    1 avocado, diced (optional)
    Ground chipotle (and/or any other spices you want to use)
    Shredded cheese
    Fresh cilantro
    Flour tortillas, warmed

    Marinate sirloin steak in beer for approx. 30 minutes. Meanwhile, put the cream cheese in a bowl and mix in ground chipotle to taste (more for spicier), along with any other spices. Add diced cilantro.

    On medium-high heat, grill sirloin steak to desired doneness (I did about 5 minutes per side for medium). Once done, place on a cutting board and allow to sit for five minutes. Meanwhile, put onions in the pan the steak just came from and allow to grill. Once steak has sat, cut into strips on a bias.

    Turn burner to low. Add packet of fajita seasoning, approximately 1/4 cup of water, and steak strips to the onions, stir. Continue stirring occasionally for several minutes.

    Spread cream cheese mixture onto tortillas. Add steak and onions, and top with shredded cheese and (optional) tomatoes and avocado. Garnish wish fresh cilantro.

  • I'm going to recommend Cooking Light magazine if you're a less-experienced cook (or just more pressed for time) and Bon Appetite if you're more-experienced. I've almost never had a bad meal from either one.
