This is one of my favorites. Last time I omitted the cinnamon, added chocolate chips and a 1/2 cup of creamy peanut butter. So yummy!
I agree with the Quaker recipe. It's always a hit. However, be aware that the recipe has changed. If you look at the one on their website, it's different than the one I got off of my Quaker canister years ago. (And they are both labeled Vanishing Oatmeal Cookies, so it doesn't appear to be a separate recipe.) I made the one on their website recently, and it wasn't nearly as good as the old one. Less chewy, slightly more cake. Use the one that calls for 1 cup of butter, rather than the 1 stick + 6 Tbsp.
Other than that, I LOVE this peanut butter cookie recipe. It's not crispy like most pb cookies. Nice and chewy.

Also, if you want to do a chocolate chip cookie that is different than the popular chewy type, this one is thin. It's also crispy on the edges but chewy in the middle. They are so good. I know it will look weird because it has no eggs in it, but trust the recipe. It works. (Be sure to leave plenty of room between cookies, because they spread quite a bit. Mine ran together.)
