whats for dinner?

I made eggplant parm tonight with spaghetti, first time I ever made it (not the spaghetti lol). It came out really good, I was impressed! Even better then my moms, can't wait to tell her because she is a GREAT cook and I love finding something I can make better (I think the only other thing is chili so far). Maybe because she uses low-fat cheese and I want all the fat in cheese I can get :)

Here is the recipe I used, super easy - I had to find one with the ingredients I already had because I didn't want to go to the store

  • Sounds yummy! As much as I love eggplant parmesan, I haven't tried making it on my own. Going to add that to my list of recipes to make

    I bought a rotisserie chicken from the store, lol. But I did sautee some mushrooms in olive oil and balsamic vinagrette. I also made some cream of potato soup (it turned out alright) and had a salad.

    DH isn't home yet, so I ate dinner by myself for the first time in a while. I'm also watching a chick flick and am planning on eating some ice cream in a few minutes.

  • I wish I weren't so picky and that I liked more vegetables... bummer for me. I like making chicken parmesan :) I think I make it pretty good... That and my pesto chicken paninis... delicious. 

    For dinner, I cooked up a "pasta sides" packet of Taco Rice and ate about 1/4 to 1/3 of it... wasn't too pleased.

  • Mmmmm... and eggplant parm is easy to do GF! Thanks for the recipe.
  • I had more of a liquid dinner tonight, since DH is out of town (just for a couple days this time around).  Two margaritas with my favorite coworker, who is leaving Monday, a few onion rings, and some boiled shrimp.  Like, 4 of them... we were definitely focused on our drinks and our convo.

    Bonus... she's very senior to me, and was just a contractor where I/we work.  She is well-qualified to run her own department, and told me tonight that when she does have her own department, and if she has an open position, I am first on her list of people she'd want to come and work with her.  I took that as a huge compliment, so I am feeling pretty proud of myself today :)

    *Butting in* sounds like you had a pretty good dinner if you ask me :) I'm not sure what it is, but a margarita sounds so good right now. I'm not a drinker (even before pregnancy), but maybe the off-limits of the alcohol makes it sounds enticing... even the onion rings and boiled shrimp sounds pretty good.

    That's great news about the possible position! I love to hear when things work out and possibilities open up!
