Hello ladies - looking for some help here.
My friend is bring induced this week with her first child. When H and I go to visit her and the baby for the first time, I'd like tobring some type of food for her and family, like a main dish. Looking for some ideas of something easy to make, and easy to transport (I live about an hour away from her). Any suggestions are appreciated!! TIA

Lasagna or baked stuffed shells?? Or any type of pasta type of meal.
My BFF just had her baby on Saturday, so I'm doing the exact same thing you are this week
. I think casseroles tend to be the easiest thing to transport and reheat. I plan on taking them this chicken stuffing casserole I make, I don't know the exact name of it. Here's the recipe I use...
3-4 boneless chicken breasts cut into chunks
1 can of cream of chicken soup
8oz of sour cream
1 bag of mixed veggies (I use carrots, broc, and cauliflower)
1 can of corn
1 box of chicken flavored stuffing prepared
salt/pepper/onion powder to taste
Directions: Cut chicken into chunks and set aside. Mix soup and sour cream together, then mix the veggies, corn, and chicken in with it, add some salt/pepper/seasonings if you want. Spread mixture eveningly into a greased 9X13 baking dish. Top with already prepared stuffing. Bake at 350 for 40 minutes.
This reheats really easy and the leftovers are almost better than it is the first time around.

It's super yummy and very inexpensive and easy to make. It only takes maybe 10 minutes to throw it all together. It really doesn't even need a side item to go along with it since it has stuffing and veggies, but sometimes I just heat up rolls to go with it.
I'm a little late here, but I agree with others on casserole. I've always brought lasagna to friends. You could also do something like taco soup (although, not sure where you are...it's way too hot for that right now where I am, and I think in most places - ugh!).
Whatever you do, I would recommend making something she can freeze. I'm sure she has a lot of people bringing meals to them, so if yours can be frozen, it will be really helpful for them to have later.
