Dinner inspirations

I'm completely over trying to figure out what to have for dinner each night. I feel like I'm not eating enough of a healthy variety of fruits and veggies.  DH only eats peas, corn, and carrots.  I don't eat peas or corn.  He also doesn't eat fish. Neither one of us eats peppers or onions, although I will cook things with onions in them. Now he's told me to just start making whatever and he will try it, but I'm so sick of the planning and shopping. I do enjoy cooking, but the amount of time I'm putting into planning and shopping is just too much.

I'm going out now to do a few errands and get the things to make tonight's dinner, chili con carne, and then I'm coming home and ordering the rest of the  groceries online to be delivered.  Can you all spare some dinner inspirations?

  • Why dont you make pork medallions in an apple/carrot sauce.

     

    Just dip the pork medallions or porkchops in flour and cook them in a frying pan with a little bit of olive oil. Peel and dice about 4 carrots. Cook them in the frying pan, add 1/2 onion, and 1 apple (peeled and chopped). Add a bit of flour to the pan and cook until brown. Add some rosemary.

     Add a 1/2 of wine and 1/2 water with a bit of chicken stock. Bring to a boil. Place the pork back into the frying pan and let it simmer for about 20 minutes.

  • I am thinking on tonights menu will be spatchcock chicken on the BBQ with salad and baked potato's. Followed by fruit salad - strawberries, pineapple, mango, cherries. I am making the most of the warm weather.

  • Oh, you have a grill. Lucky you. My problem is that my DH prefers that I make food with some type of sauce so he can take leftovers to work the next day.

  • You could always mix left over chicken with Mayo and have chicken mayo sandwiches. Yummy!

  • Last night I saut?ed a frozen veggie mix, tossed in some peanuts, ground beef,  soy sauce, chili powder and brown sugar and added some noodles. It turned out pretty good!

    I'm in love with Italian food. Tomato sauce apparently gives you an insane dose of vitamins and such, so doing pasta or rice dishes with a tomato based sauce will always be nutritious. I'm sorry I'm not much more help right now, but I've been out of inspiration myself for the last few weeks.

    Friday: Peach and Gorgonzola Chicken Pizza

    Saturday: Chicken Butternut Tagine with broccoli and couscous

    Sunday: Grilled Pork Chops with asparagus and fruit salsa.

  • I found it is the way it is cooked rather than the food itself that is gross. For instance, when I cut brussel sprouts in half and saute them my family scarfs them up- heck even our neighbor's kids who are anti-veg ate seconds. But boiled? You would think I was making them something equal to the nasty crud on fear factor. Maybe you should start making veg in an alternative way? Start by taking something and trying an alternative way of making it. I checked out youtube for cooking tips- for me it helped to see someone make something not just follow a recipe. Sorry it doesn't answer your question, but maybe it will give you some food for thought? Ha ha! Love that pun....

    I'd love the aubergine and butternut squash recipes, for when I get beck to the UK.( in 5 weeks, Woohoo)
