Candy/Cupcakes for party - how far in advance?

I'm trying to make a plan of attack for prepping everything for my daughters birthday. I'm hoping you can help me with a timeline for a couple of items.

 

I'm making chocolate lollipops as favors. How far in advance do you think can I make them? Weekend before? Earlier? Is storage in the fridge ok or would a dark cabinet in a ziploc be better?

What about the cupcakes? Would baking them Thursday and frosting them Friday be OK for a Saturday party? Would they be OK in a tupperware?

  • I've done chocolate lollipops 3 days in advance of a bridal shower and kept them in the fridge until we needed them - that worked out just fine, but I'm sure you could do them the weekend before and they'd still be good.

    As for the cupcakes - your plan sounds like what I would do! I've had many orders for cakes and I would decorate/ice the cake the day before it was due and make the cake the day before I decorated/iced it. Depending on the frosting, though, you may want to keep the cupcakes in the fridge after icing them (in case the icing is really runny...)

  • You can easily make the chocolate candy a week in advance.  Same with the cupcakes.  You can always freeze the cupcakes one baked and cooled, and then just bring to room temperature the day before and frost.
  • I'm doing cupcakes for my son's birthday as well and was thinking of doing them the same way. If they can't get icing on them Friday, which is his actual birthday, then I will put together an icing team on Saturday. That is if I can get my family to agree to it haha.

  • I've never done chocolate lollipops, so I can't give an opinion on that. As for the cupcakes you have a few options. Do as you stated, just make sure to keep them well covered after they've completely cooled. If it's warm near you I'd recommend popping them in the fridge over night (make sure they're covered though, otherwise they'll start to dry out). If you frost with storebought frosting or a homemade buttercream you should be fine leaving those out of the fridge over night (unless it's really hot in your home). If you go the cream cheese frosting route I would recommend refrigerating, or else the frosting might get too soft (or even melt if it's too warm!).

    If you think you want to do things even earlier. You could also bake and freeze the cupcakes. I would recommend individually wrapping each completely cooled cupcake in saranwrap before placing it in a tupperware container. Take the cupcakes out of the freezer the day before you'll be frosting them. Leave them in the container and saranwrap until completely defrosted, otherwise you will have too much condensation on the cupcakes and they will get sticky and gooey. Unfrosted frozen cakes and cupcakes can be kept in the freezer up to 2 months. I made my wedding cakes, and this is the method I chose. I found there to be no negative effect on the taste or texture of my cakes, and even received a large number of requests for the recipe from our guests.

    If you're freezing you may want to consider making your frosting in advance and freezing as well if you will be really pressed for time the day before the event. Simply store the frosting in a freezer bag. Let defrost in the fridge overnight. Then re-beat to bring it back to a spreadable texture just before using.

    I wouldn't recommend making your cupcakes more than a couple of days in advance unless you plan to freeze them. Fully frosted cakes can be kept at room temperature for 4 or 5 days before they start to go stale. Unfortunately cupcakes are generally not completely covered by a layer of frosting, so don't tend to last as long when left out.

    No matter what method you choose I'm sure your daughter and guests will be delighted. Good luck!
