I was planning on making your banana oat bread today, but obviously I didn't read through the recipe carefully enough and I don't have buttermilk. I just got back from the grocery store, so I'm trying to avoid another trip if I can. Do you think I could use regular milk? And have you ever subbed applesauce for the oil? Thinking of trying that too...

You can add 1 tbs lemon juice or vinegar to a cup of milk and let it sit for 15 min and then you have buttermilk!

I generally "make" buttermilk with vinegar and milk
I haven't subbed the applesauce for oil on that bread yet, but I bet it would work. Maybe swap out half of it the first go round?

I read this as her saying that she keeps one 1/4 cup of real oil for every 1 C of applesauce she uses in a recipe. Am I reading it wrong??
I thought since she said 1 c. applesauce to 1/4 c. oil, that she was referring to a substitution ratio.
Either way, I am planning to make it this afternoon. I am excited to try it!
