Corn, it's here...

So I finally picked up two ears of local sweet corn last night! On of my favorite summer things...

What is your favorite way to cook corn on the cob? I grew up always boiling it...but I was thinking of trying something new. There was a skinny recipe today for roasted corn...

Any other recommendations?

  • I always soak it in some water with a little bit of sugar for about an hour and then grill it with the husks on.  Then just eat it drowned in butter.
  • I like it grilled with garlic butter.

  • Soak it in it's husks and then throw it on the grill it (still in husks)-- I don't even use butter after grilling it because it makes it so delicious. It usually takes between 15-20 minutes to cook to completion.

  • Without pulling the husks off, I pull out all of the silk, slather the corn in butter, salt and pepper, than put the husks back on and wrap in aluminum foil. Then I throw them on the grill, and they turn out amazing!

  • we grill it - it's SO good that way.

    lay out foil, have some water (I think Tim usually just wets the corn and puts it on the foil dripping wet and maybe adds a little bit more water), add butter if you want, and wrap it up completely.

  • If you want to do something else with it you could make corn fritters. I posted a link to a recipe in my blog back in june. My sister makes them and they are so good.
  • We often boiled it for family dinners, but then when we were having a party we would:

    - Remove some of the outer husks & the "hair"

    - Soak it in Salt water for 1hr

    - Grill

    - Take an old metal coffee can and place it on the grill and melt butter in it

    - When the corn was done, peel back the remaining husks, dip the whole ear in butter, then shake salt on it

  • If you're short on time just microwave it (husks on).  I swear, it still tastes delicious!

  • Ok, I should have specified that I do not know how to turn the grill on...and K is out of town. Our grill is broken and you have to do something special to light it, but I stay out of the way when this happens. 

    Maybe I will have to just oven-roast.

    1) I have 5 ears of corn from last night sitting in my fridge... so good cold Smile. I can share if you want!

    2) oven roasting tastes great as well-- last time I did it, I didn't even soak it, just threw it in the oven in the husk and let it cook for 20 or so minutes.

  • I agree that grilling is the best, but like Jaime said, if you're short on time you can cook them in the microwave.

    I just wrap the ears (minus the husks) in damp paper towels and nuke for about 5-6 minutes. It's just as delicious, I promise :)

  • We grill them as is, no soaking, etc. I like it plain, no butter, no salt, nothing. Summer sweet grilled corn is soo good it doesn't need anything!
