would this freeze well?

I have a SIL about to have a baby, and I know we'll go visit.  I like to take a meal, but have been struggling with what to make, that's a little different.  I have this recipe: 

Chinese Chicken Bake...

2 tbsp butter, melted
1/4 tsp onion powder
2 1/2 cups crisp rice cereal
1 8 oz can crushed pineapple, drained thoroughly
2 cups chopped cooked chicken or turkey
1 10.75 oz condensed cream of mushroom soup
1 ? cups chopped celery
2 tbsp chopped green onion
4 ? tsps soy sauce

Preheat oven to 350. 

Combine butter and onion powder.  Gradually add cereal, stirring until all pieces are evenly coated.  Set aside.

Combine pineapple, chicken, soup, celery, green onion, and soy sauce.  Stir in 1 cup of cereal mixture.  Pour into ungreased 2 quart baking dish.  Sprinkle with remaining 1 ? cups cereal mixture.  Bake 30 minutes or until top is lightly browned.

(I think I'll add broccoli florets, snow peas, water chesnuts, etc to have the veggies in there too)

 

Do you think that would freeze well, so I could make it ahead, and then have it ready to take to them?  It's a 4 hour drive to visit, so I need something I can make ahead and keep frozen in a cooler in the car.  I think I may even make a whole batch, and split it into 2 8x8 pans, 1 for us, 1 for them.  :)

  • Cream of X soups are kid of iffy but they can do okay sometimes too, like in party potatoes. I'm pretty sure the crisp cereal isn't going to be the texture you'd like after freezing though.

    What if....

    hmmmm what if you made the krispie mixture on the day that you leave, and bring that in a separate baggie with instructions to put it over the top.  ??

  • I agree on the rice crispies... anything "crispy" ends up soggy when you freeze it... MrsReem has a good idea on making the topping and bringing in a baggy.
