Question for the cooking ladies :-)
I am having around 50-55 people at my house in 2 weeks for my 30th and am having a really hard time with the food situation. I definitely want it catered because I am not going to have the time to cook 4-5 different hors d'ourves for that many people the morning of and well I could do it the day before but alot of the stuff I want to do is fried which will get soggy I am guessing. Well the problem is the place I really wanted to use won't return my emails so then I contacted a restaurant which has amazing food and their prices are pretty good but the girl sent me a list of stuff the chef will not do because it doesn't sit out long very well I guess and of course all the things he won't do is what I want :-( Any suggestions? I am really trying to avoid publix type platters.. no sandwiches and veggie platters basically lol.

i agree with the restaurant...it's REALLY hard to make fried stuff sit out and still taste good. and you dont want people biiitching about how the food sucks when it's not your fault. we never do fried foods that will just sit out. our apps that sit while people graze are made to be able to sit and hold up.
what is it that you want? can you share the menu the restuarant provided? i'm really good at creating a versatile menu for lots of diff people.

I as hoping you would chime in :-) I was going to use Ember. From there I wanted empanadas, crispy honey strung shrimp, crab and goat cheese rangoon, and sliders but of those they can only do the sliders :-( And I am going to make mozzarella caprese skewers and have a crab dip with crostinis. Any ideas?

I've had empanadas, rangoon, wontons and chicken sit out with no issues in the past. If you were worried, you could just keep them in a moderate oven (220 or so) and replenish as needed.
However, shrimp is something I'd avoid putting out for a party, unless they were on ice. Shell fish have a tendency to turn when out (or reheated)
