dessert ideas

What's your go to easy dessert? We're going to a friends for dinner tomorrow and I offered to bring dessert. I'm tired of my usual suspects and I'm looking for some new ideas.

  • What about a cobbler or trifle? The cobbler is the most hands-off of the two and both berries and peaches are in-season and wonderful right now.

  • Most of the time we do a fresh fruit salad ( strawberries, blueberries, mandarins, banana, pineapple, red/green grapes and kiwi ) with homemade whipped cream. We don't use sugar, we use a mixture of honey, fresh lime juice/zest, and pineapple juice.     I don't like blackberries, though, so I have used fresh blueberries or strawberries. I have also used a large (28oz?) can of peaches (drained) or can of apple pie filling.  Every time it has come out delicious!!! 

    (if you don't have self rising flour, i think you can make your own with all purpose plus baking soda(?) and salt?  - not sure - but I am sure the interwebz can provide you with the exact substitution. I always keep self rising on hand after having this recipe and I make it all the time b/c who doesn't always have butter, milk, and sugar on hand?).

  • My go-to easy dessert is a strawberry trifle - layer the following

    torn pieces of angel food or regular white cake

    frozen strawberries (in juice) thawed

    1 box vanilla pudding, mixed according to directions, mixed with 1 carton of cool whip

    Layer each 2-3 times depending on how you want it to look.

  • i took dessert to a gtg last week and made banana pudding.

    i made instant banana and vanilla pudding together, then lined the bowl with nilla wafers, then sliced bananas. added pudding, then layered more wafers and bananas. top it off with a layer of wafers, then sprinkle with sugar and cinnamon.

    no one believed that i made it from a box.

  • How about root beer or coke floats or ice cream sundaes.  For the sundaes, I put a few banana slices in each bowl, ice cream, strawberries, home made chocolate sauce and top with roasted slivered almonds or pecans.  Simple, cool & refreshing, especially in this heat.

    Four words: it.is.worth.it.   How bad is it that I totally manipulated DH into having this for his bday on Sunday?

    Me: "Dude, cake is so boring, and you don't even really like cake.  That peanut butter pie I've made before is really good, though.  Do you maybe, possibly want that?"   

    DH: "Sure, ok."  

    I win. 

  • The peanut butter pie is good, but realllly rich.  When I made it we only ate about 3 pieces, it was just too much for me.  But it was very tasty.

    Mine easy go to is chocolate chip cheesecake.

    Make a batch of chocolate chip cookie dough and spread half of it into a 13x9.  Mix up  8oz. cream cheese, 1/2 c. sugar, 1 egg and 1/2 tsp vanilla and spread it on top of the cookie dough. Spread the other 1/2 of the cookie dough on top and bake at 350 for about 35 min.  Until the top is brown.

    Also chocolate eclair pie:

    1 box graham crackers
    2 packs instand pudding (I use 1 box vanilla and 1 box of french vanilla)
    1 container of cool-whip (thawed iin the fridge)
    3.5 cups cold milk

    Chocolate Frosting - I use the recipe on the back of the Hershey's Cocoa Powder

    Mix the pudding and milk together for about 2 minutes. Mix in the thawed cool-whip. Place a layer of graham crackers in the bottom of a 9x13 pan. Pour half the pudding mixture over the top. Put another layer of graham crackers on top. Pour the remaining pudding over top and top with another layer of graham crackers. Put in the fridge for a couple of hours or overnight. When it has chilled and set, spread chocolate frosting over the top.

  • seriously. make the PB pie. its uh-mazing. I think  4 of us made it in one week. you will want to eat it all.
