i am on a mission to use as much of our CSA goodies as possible.
tonight, i made an asian slaw. i used both the red/purple and green cabbages and the gigantic scallions - all from the farm. i added a pack of crushed ramen noodles (tossed the seasoning pack because of the msg), some slivered almonds and some mandarin oranges. dressing: 2TB sugar, 3TB olive oil, 3TB rice wine vinegar, 1TB low sodium soy sauce, a little pepper. served with teriyaki skirt steak and corn on the cob and grilled eggplant.
and i roasted all the beets from the share. i am waiting for them to cool, and then i need to peel them. i'll be adding them to salads this week, since we also have a lot of lettuce. tomorrow's lunch is: lettuce, tomatoes from the farm, leftover corn cut off the cob, sliced steak, sliced beets...maybe some guac too.
now to find something interesting for the chard. we didn't love it sauteed.
Re: rocking the harvest this week!
The Asian slaw sounds delish!
How about smashing some potatoes with the chard? My Dad makes a peasant dish like that and it's good.
this is one of my DH's favorite meals.
