What's for dinner?

H is leaving for Geneva in an hour so it's just me tonight.  I have a bone-in chicken breast, chick peas, quartered cherry tomatoes and pepper slices tossed in an olive oil and paprika marinade in the oven.

I need ideas of things to make for myself for the rest of the week.

  • I made this last night and it was AMAZING!!!

    I'm making this tonight, served with asparagus.  I've never made it before, so can't vouch for it's tastiness.

  • DH works late two-three nights a week, so I am on my own for dinner those nights.  Often I will get a pound of ground turkey and either make turkey burgers to have as burgers (may favorite way is on naan bread with garlic butter and sweet onion chili marmalade) or as patties with a quick gravy, pasta and vegetables (I cannot get enough corn/peas!).  Other weeks, I brown the turkey and use it for quick pasta sauces, tortilla pizzas, omlettes or a "sausage" gravy for gravy and biscuits.

    But tonight, I made a tomato-rice soup from leftover creamy tomato bisque and fresh cooked rice.  I had toasted beer bread to go with it.

    I'm the worst SAHM/SAHW ever.  I barely ever cook.  I don't have a car to go to the store though so that's my excuse.   

  • I'm making roast chicken with wild rice and some veggies, plus some shortcake and cherries for dessert. This of course means that delicious chicken soup is in my future tomorrow--yum!
  • We're having lamb chops over couscous with roasted courgettes/peppers/tomoatoes tonight.

    But I hardly ever cook for myself if H is out so if it were me, I'd stock up on snacky foods and have that every night Embarrassed

  • We are having pork chops and veg out the Abel and Cole box, even I am in for a suprise.

  • I think I'm going to make a veg, tofu and cashew stir fry with jasmine rice and a salad.

    That sounds really good, and tofu isn't something H would ever eat, so the time to make it is when he's gone.  What spices/marinade do you use in the stir fry?

    I usually wing it with spices...whatever I see in the spice cabinet. It's usually cumin, ginger, garlic, a little curry, soy sauce, maybe some miso, and sesame oil at the end. This probably isn't much help!

     

    Thankfully DH likes tofu!

  • Salmon, couscous, greenbeans with cherry tomatoes. I made carbonara (pancetta, eggs, cheese and cream pasta) last night, so I want to lighten the calorie/saturated fat intake tonight.

    I also just copied out this recipe and can't wait to try it out!

  • This post is making me hungry!

    My mom is making Tamarind Curry Chicken. It is amazing.

    It's been so nice not to have to cook or think about what to make for the past 6 weeks. 

  • You wouldn't like what we're having - steak, ale & cheese pie.  Nom, nom!
    I like pineapples...they make life just so much more interesting.
  •  A big ol' salad, bbq chicken wings and parmesean au gratin potatoes.  Easy schmeasy dinner tonight. I did not feel like cooking much.

  • I brought home a fresh baguette on my way home from babysitting. I ate it with some olive oil and grated parmesan cheese. Then I steamed broccoli, cauliflower, and carrots then added some butter, salt, and pepper to them.
