Re: what's cooking this week?
We've also been in a rut between the heat and crazy work schedules...
...but this week we are attempting a meal plan!
Sunday- London Broil with salad, potatoes and corn
Monday- My parents made "Thanksgiving in August" which was pretty cute so we ate that. (Someone gave my dad a turkey, so he came up with the idea. They had stuffing, salad, cranberry sauce, mashed potatoes and watermelon for dessert)
Rest of the week- don't know. I have some burgers, ground meat, chicken and beef in the freezer so we'll see where it goes. I am actually leading towards pasta tonight.
Sunday: We had pizza since we spent the weekend in VA
Last night: Pesto Chicken Stuffed Shells
Tonight: Pan-Fried Chicken with cous-cous and tomato & corn salsa
Wednesday: Sweet Potato & Black Bean Enchiladas with guac
Thursday: Leftovers since we will be in NC from Fri.-Tues. visiting the in-laws
now i remember sunday! it was delicious.
ribs cooked in the willams-sonoma irish stout braising liquid over buttered egg noodles. mmmmmm so good.
I LOVE their Irish braising liquid. It is soooo good!
Last week I cooked THREE nights in a row. The heat was just unbearable to be in the kitchen.
Saturday I grilled a london broil, baked potatoes and salad.
Sunday Chinese
Last night left over LB, shredded it, added banana pepper rings and melted cheese over and made steak sammies
tonight: greek pita pizzas
Wednesday: sausage and peppers and pasta
Thursday: dh is back on night work, so I have no clue
and I never cook on fridays.
mmmmmm whenever I need a thanksgiving fix outside of November, I head to the Turkey place in Reading Terminal. They always have a 'thanksgiving on a roll' sandwich that rocks my world. now i'm hungry too and wishing I worked in center city.
Sunday I made Ina Garten's Company Pot Roast with mashed potatoes and corn. Always a treat. It's probably the most gourmet thing I can make.
Last night we had Wegmans hoagies for dinner.
Tonight we'll eat pot roast leftovers, yum.
Wednesday - I have a late softball game, so not sure yet.
Thursday - We have friends coming into town, so I have to come up with something to make. Maybe chicken sausages and veggies on the grill.
Yum, McNally's in Chestnut Hill has a sandwich like that called the Dicken's.
Sunday: we went out to eat
Monday: I made a huge salad with greens, carrots, goat cheese, toasted walnuts, and apples. Mr erbur thought he was slicing a cucumber, but then realized it was a zucchini, so I sauteed some of that.
Tonight: Kale, chickpeas, with feta, topped with a hard boiled egg
Weds: BLTs, I think? We have a mess of green beans, so I should use them for a side.
Thurs: this eggplant dish I just read in Animal, Vegetable, Miracle. http://tinyurl.com/8gmnml
Friday: Home made pizzas.
Last night--Sweet Potato, Prosciutto, Ricotta, and Arugula Flatbread. It was really yummy! (recipe from http://tinyurl.com/3uazo7h)
Tonight--Rigatoni with Tomato, Basil, and Mozzerella
Tomorrow--grilled chicken and eggplant parm
Friday and Saturday--out somewhere
