Any recs on where to eat in Las Vegas?
I am going with a group of people so I could use suggestions for both buffet/cheaper options and nice restaurants. Bonus points if you can give me any extra info on the place (tips on booking, what's tasty, price ranges, etc).

I did an internship at Spago in Las vegas (in the forum shops). The food is GREAT!! they have a cafe menu or a fine dining menu so the prices are a decent range. The desserts are great (what i did) I recommend the souffle.
You could also try Cut I haven't been there but I know the chef and pastry chef there so the food is I am sure amazing!

The crepe place in Paris is AMAZING. We had lunch there ... I had a d'anjou crepe (almond paste, pears, nuts and caramel sauce), and we got a crepe with spinach and goat cheese. Mmmm. Definitely a great lunch. $
The creamy marscapone risotto at Stratta at the Wynn was utterly dreamy. $$
The best dinner I've ever had was at Alize at the top of the Palms. I had pork chops with mashed potatoes. I still dream about the aroma wafting from under the silver platter covers. $$$
The huz and I LOVED Red Square. Perhaps because the drinks were amazing? Perhaps because fried potatoes are just so yummy....

also, read this review http://www.weezermonkey.com/2009/10/sexy-food-show.html (and really all her Las Vegas restaurant reviews) seriously, makes you hungry just reading it. i've always wanted to try this one, but it's a little pricey. (perhaps one day)
I liked Mon Ami Gabi for a more casual place. They serve breakfast, lunch and dinner as far as I know. If you're going for dinner, try to make a reservation and ask for a table outside - that way you can see the fountains at the Bellagio.
We ate dinner at Roy's (off the strip) one night. We liked Roy's in Kauai and I've heard good things about the one in SF. This one seemed pretty par for the course. More expensive but not super duper fancy. We had the lilikoi mixed greens (nice salad). Their entrees seem to have changed since we were there in early June but all the fish I've ever had there were very good. They have good desserts too; they're known for their upside down pineapple cake, which I really like.
If you want something pretty fancy/gourmet, I had the best dinner of my life at Le Cirque at the Bellagio. The decor/atmosphere is really cool (Google "Le Cirque Vegas" and the photo at the restaurant's site captures it well.) We had appetizers, entrees, desserts and booze and it came to about $400 for two :-/ But it was pretty much our splurge for the vacation, and IMO totally worth the money. The food and the service was just fantastic all around. I had no complaints about the experience whatsoever. They even send you home with a box of truffles they make there (in addition to any dessert you have there). You CAN do it for cheaper though. You'll definitely need a reservation and you'll want to dress up. It's the kind of place that can work for a group (though don't go there to party) or a couple.
As far as what we ate there: For appetizers, I got the escargot (super buttery deliciousness) and DH got the white asparagus with quail egg and truffle vinaigrette. Entrees were seabass for me and lamb for DH - both fantastic. I still dream about that fish and those leeks and that sauce... Oh god. Yummy. Dessert was something chocolatey for me - heaven. Don't remember what DH got...
The girls on the travel board have some recs for Vegas restaurants so check there too.
ETA: DH also had a great dinner at Olives (also at the Bellagio) a couple of years ago as part of a bachelor party. Still nice but not as fancy/pricey as Le Cirque. Try to make a reservation though - they get pretty busy.
