lol. we usually always buy shredded cheese because we can freeze it.
lately i've been buying 'regular' cheese and its gonna go to waste.. it's too much to finish and i get sick of it after a while.
maybe i'm just not that into cheese.
Too many of the clickies is what we could be so I did SS.
We buy block cheese and usually grate that up or slice it, except in the following cases.
* Low-moisture mozzarella for pizzas.
* Velveeta for when I'm just craving grilled cheese sandwiches that just ooze. :P
But we also buy a whole lot of crumbled goat cheese, blue cheeses, brie, random other cheeses. For a lactose intolerant house, we really love cheese. ^^; My current favorite thing to do is go to the Fred Meyer down in Ballard and pick up one of their pre-made cheese plates with dried fruit, an assortment of cheeses, and marcona almonds. They usually have them in American, Spanish, or French cheeses. It's pretty tasty.
I'm a cheese whore.
I just counted over 9 types of cheese in my cheese bin. I buy in blocks and shred myself.
I do have a few slices in the draw at this time, that are sliced by the deli, because for whatever reason you can't get white american cheese anywhere but the deli.
DH just gave me the side eye tonight when he saw a reserve block of Beechers cheese I bought. Apparently I really shouldn't spend $12.50 on half a pound of cheese. ( I told him that cheese and crackers and wine I had for dinner that night was cheaper than his golf game!)

Re: cheese plates -- i like the tiny cheeses at Metro Mkt/coops/etc.. TJs also sells marcona almonds. Mmmm.

Costco carries a couple different types and last time I checked most of them were around $7.99 a pound there.

Since I did that diet elimination thing, it seems most milk products give me some intestinal distress so while we used to keep more cheese around, we aren't as it just goes bad more frequently now.
What we do have is that H loves to stock up on the grated cheese blends in a bag when they go on super sale for $1 each. He throws them in the freezer so they don't go bad, and then he can defrost as he needs. He usually gets either Italian mix or Mexican blend (for nachos). We do make sure to buy a nice large wedge of grana padana at Costco, then I shred it with the food processor and we keep that frozen for sprinkling on pasta. We decided we like the grana better than parmesan...it has a more complex flavor but is similar. Since I have less of an issue with goat cheese, we will occasionally have a bit of that.
