another non mayo one...I just did this with several adaptations...I only did eggplant, squash, red onion, and okra as my veggies...and I roasted them. I did not have the feta or olives and I did not layer it. I think it would be delicious this way, it was just a lot of ingredients.

I also make a mayo one - Mayo, hardboiled eggs, celery, onions, mustard powder, salt & pepper, dash of cayenne and potatoes - no recipe though.
We've made this one a few times - its soo yummy.

Usually I make my Mom's recipe which is just red potatoes, a dollop of mustard, enough mayo to coat, green peppers and celery seed.
That sounds amazing!
