Recipe swap: Tomatoes!!

Sorry gals, I've been MIA the last few weeks, crazy busy.  I can't tell you how much I'm looking to fall :-)

This week's swap - tomatoes,  Love tomatoes, gimme your best recipes.

 

Crab Stuffed Cherry Tomatoes

? lb. lump crabmeat

1-2 tsp. chili sauce

? tsp. Dijon mustard

2 Tbsp. mayonnaise

? tsp. Worcestershire sauce

2 scallions, finely chopped

1 Tbsp. fresh basil, chopped

1 Tbsp. fresh chives, chopped

40 cherry tomatoes

Salt & pepper

 

In a bowl, combine the filling ingredients.  Mix well, cover and refrigerate until needed.

 

Using a serrated knife, cut a very thin slice from the stem end of each tomato.  Carefully scoop out pulp and seeds.  Lightly sprinkle the insides with salt.  Invert them on paper towels and let drain for about 15 minutes (salt draws the water out).  Using a small spoon, stuff the tomatoes with filling, mounding the filling slightly on top.  Serve cold.

  • We made tomatoe soup this week and it was delicious. I wish my H had made a bigger pot, in fact.

    I don't know the exact recipe but it was a lot of tomatoe, basil, onions, celery, and any other spices. It came out amazing. He left it very chucky, which I love so it wasn't smooth tomatoe soup. YUM YUM YUM.

  •   Amazing fresh pasta sauce

    • 2 pints cherry tomatoes (about 2 cups, or 12 ounces), halved
    • 3-5 scallions (white and pale green parts only), coarsely chopped
    • 3-5 cloves garlic, chopped
    • big handful or two fresh basil leaves
    • 4 tablespoons olive oil
    • Pinch salt
    • Pinch freshly ground black pepper

    Mix all the ingrediants, and then food process to chunky (probably will take several batches in the food processor depending on size.) 

    I put this over pasta with pan roasted corn and fresh mozzarella - so yummy!

  • tomato gazpacho:

    take tomatoes, salt, pepper, pasley, basil, and a splash of white wine. throw it in a blender. voila. tomato gazpacho :) lol

    (we serve this at my job, and i watched the guy make it.. we charge $12 for a bowl of pureed tomatoes... something akin to liquidy salsa.. it makes me giggle everytime i serve it)
