freezer meals

anyone make any delicious freezer meals before the baby was born? i have egglplant parm in the freezer but planning to make baked ziti, stuffed shells, chicken marsala... these are all small trays. just looking for some more ideas. especially for the nights dh is coaching till 8.

Re: freezer meals

  • i almost always have meatballs or meatsauce in the freezer. it can reheat while pasta cooks. you can also freeze garlic bead.

    i often bring chicken stir fry to new parents with white or brown rice - it freezes well too. i can post my stir fry sauce recipe later if you want - it's at home.

    i'd make some chicken cutlets too - you can turn it into parm or make cutlet sandwiches or even thaw and chop over a salad.

  • also think about breakfast foods.

    i've tried a million recipes, but i can't seem to bake a light and fluffy muffin. but if you could, i'd want some of those frozen. you can nuke it and eat a warm muffin with one hand!

    and you can freeze waffles and pancakes too - for breakfast, lunch or dinner.

  • You can also vacuum veggies- some freeze nicely.  We seal and freeze our garden string beans.  Sausage/Pepper/Onions also freeze well.

  • I did some freezer meals before G was born - beef stew, pot roast, red sauce, meatballs, lasagna.  All were very helpful to have on hand. 

    I also stocked the freezer and pantry with items needed to make some slow cooker favorites.  It's just as easy as thawing a freezer meal and nice that it is fresh cooked that day with, in many cases, only 5 minutes effort.
