I've been making a lot of mexican casseroles and stuffed peppers
What about the baked jalapenos w/ cream cheese stuffed inside? Although that's more of an appetizer.
I made jalapeno cheddar hummus last week and some pico de gallo. We have two tiny plants but they are really shooting out some peppers haha.
Rub with olive oil and roast them on the grill.
Then lay them on a cookie sheet and freeze.
Once frozen, you can re-store them in a baggie all together.
Take out as needed for recipes throughout the year.
The skin falls right off once defrosted.
I would think you could freeze them, just like any other pepper.
I usually try to buy red peppers in bulk when they're on sale, then I slice them up, take out all the seeds, put into a freezer bag and freeze. Then I take out pieces as we need them for recipes throughout the following months.

either on the grill or in the oven/broiler. Poke each for steam to escape. Put on grill turn till bubbly. Put into paper bag to steam. Pull skin off slice and freeze in bags.
or make poppers!!! mmm could go for some right now on this rainy day.
