Sack Lunch Ideas?

So the hubs is deploying soon-ish, and during that time I have a "no restaurant" rule for myself.

I can already tell that just having a sandwich and some chips wont keep me interested for long. 

Any good tips that you use for a healthy, yummy lunch?

  • Salads but I like to make them awesome with lots of vegetables and feta cheese (perhaps grill chicken breast for you).

    And I like canned soup. I found some good organic ones at the commissary.

    I also make pita bread and freeze them. Then I take them out one at a time and eat it with veggies and dips. Hummus and green goddess are my favorites.

    I make dinner bigger than normal so we both have lunch leftovers the next day.

  • I love hummus on pita or naan with some grilled veggies and a little bit of shredded cheese.  Homemade chicken salad and egg salad are good go-to's...you can eat it off the plate or make a sandwich out of it.  T usually takes the leftovers from the previous night's dinner...I'm not big on leftovers.

  • I'm a big fan of Smart Ones and Lean Cuisine for lunch, and usually bring a yogurt and a piece of fruit with it.  Since there are so many different meals they have I wouldn't get bored with it.

  • Bagels and cream cheese as my sandwich with fruit and some yogurt and something snacky like a granola bar. I normally would pack a juice pack to drink just so I have something other than water to drink. I sometimes would do PBandJ. I try and eat leftovers a lot. I come home for lunch so I either make something new like a sandwich or eat leftovers. I make big meals at night because E takes leftovers and I try really hard to eat them too. 

    And I think if you cut restaurants out all together it might make you break your rule faster. Maybe treat yourself once a month or so?

    I am not a huge fan of eating leftovers, but then again I don't mind making a meal and splitting it into 5 smaller meals. So I don't really know why I don't like leftovers. *shrug*

    E&A, I am sure I will need to give myself some grace. But I really don't want to keep wasting money on junk fast food. The good thing is, I will be incredibly busy with school and everything else that I may not have a good chance to get out. :)

    Last week I made a chicken salad with canned chicken, plain greek yogurt, carrots, celery, green pepper, and paprika. It was amazing. Absolutely delish. (I also made DH the same but with tuna and he really liked it. I'm not a fan of tuna so I can't really say if it was actually any good haha)

     How about a fancy picnic lunch with nice cheeses, grapes, apples, and crackers?

    Mix up the sandwiches with buying nice fresh breads or baguettes and trying new vegetables or spreads on them. I will eat just about any sandwich if it has avocado on it :)

    Don't forget about wraps either!

  • Can I first just say that I love how you say " sack lunches"?  It reminds me of my grandma from Kentucky...I love that!

     I try to bring my lunch at least 3 days a week to save money. Ive been bringing soup and crackers lately.. Sometimes I buy canned chicken or tuna and put that over lettuce, add some olive oil and black pepper.. I really like that and its filling!

    I also do Lean Cuisines and things like that and the occasional sandwich. I always always eat turkey and cheese so sometimes I switch it up by making PB & J!!

  • I always do leftovers. The idea of a frozen meal except as a last resort makes me very unhappy. Even bad leftovers are better than a frozen meal. Plus, if you're alone, leftovers last longer :)

    I ate, no, lived a ton of those nasty frozen meals growing up. (Thanks mom!) I will never buy them again. I feel like a cop-out, TBH. And they are SOOO bad for you. Blegh.
