What's everyone cooking this week? When I'm not working, I don't plan so much in advance. I should, but I know that I have time to do it later, so I let myself procrastinate...
Today - chalupas
Tuesday - leftover BBQ chicken, but I need to come up with something to go with it
Wednesday - chicken parm at church
Thursday - chicken pot pie that my mom made us (there are 2 in the freezer for later and 1 in the fridge for this week)
Friday - maybe something that's not chicken.
ETA: Looking at it like this makes me realize that I'm not really cooking at all this week. Lazy...
Re: meal plans this week?
I'm not really into planning for the week, aside from a few thoughts on what I want to make. I'm only home for dinner Mon-Wed, so that doesn't leave a lot of planning to do.
Tonight I'm planning on pasta with chicken sausage and veggies. I have a long run tomorrow morning (12 miles!! yikes, and yay that it's my last long run before the race), so I need something carby tonight.
Tomorrow I plan to make slow cooker pulled pork. I've been wanting to make that for a while but haven't had the time to deal with it. It'll be great tomorrow because it won't take much effort and I'll still get a good meal after the epic run. And it makes the house smell great too!
Wednesday we're having lunch with my mom, and I think dinner will be pork leftovers.
Thurs and Fri I'm working at night, so dinner will be whatever I pack. DH is on his own.
Today - Tuna bake casserole
Tomorrow - leftovers
Wednesday - baked ziti
Thursday - leftovers
Friday - hotdogs and beans, steakumms, or chicken sandwiches. Don't know which one but it'll be something quick.
Saturday - we're going to a cookout, so we'll have dinner there.
Sunday - going out to dinner with some friends.
We don't really meal plan either. I just always pretty much have duck, chicken, ground turkey, and fish in the freezer and fresh veggies in the fridge. Then we typically pick one of each and maybe add some rice, beans, salad, etc. I'm pretty limited with what I can eat, but it does make our decisions simple.
Tonight, were doing duck l'orange with grilled asparagus.
Tonight - macaroni & cheese with ground beef and red peppers
Tomorrow - coq au vin
Wedneday - pork with red currant sauce
Thursday - leftovers
Friday - ?
We usually make something quick. I don't want to spend all of my time cooking before Will goes to bed.
Here's my meal list for the week. (1/2 emealz 1/2 me because I still have food left)
tonight - beef stroganoff
tues - Pepper Jack Chicken (emealz)
wed - (salad from panera...it's my knitting group night)
thur - orange chicken
friday - tuscan eggplant parm (emealz)

The Sand in My Snow Boots
I try to do this on Sundays- at least to have a rough idea of what we could make. Our week looks like this.
Last night I made crockpot chicken pot pie
Tonight we're heating up some short rib meat sauce that H made and we froze previously. Having wheat pasta with it, foccacia garlic bread...and maybe some tomatoes with it. Although I said this to H and he goes "well sauce is a vegetable..." Technically, yes since it is homemade with tomatoes, carrots, onions, etc...
Tomorrow I think we'll do tacos
Wednesday grilled chicken w/ cous cous and grilled zucchini
Thursday likely we'll grill hot dogs and make cole slaw and grill potato fries
Friday either order out/go out or I'll make salmon croquettes
Saturday see above- one or the other...
I made bbq ribs on Sunday and we have some left for tonight. Last night we had white chicken chili that had been in the freezer. Think we'll grill chicken and hamburgers yet this week. Haven't thought past that...
