Know any great fruit dessert recipes?

H's birthday is tomorrow, and he loves desserts that include fruit (pies, cobbler, etc.). I'm more of a chocolate girl, so I'm struggling to come up with great ideas. Anyone know of any recipes that are particularly awesome?

  • Mmm! One of my favorites is one of the easiest!----Peel a couple of pears and drop them into a pot on the stove that has boiling red wine in it (I usually add the whole bottle.) Turn the pot down to a simmer and simmer until the pears are soft (sorry---no idea on the time here--25 min. or so?) I usually add a couple of cinnamon sticks and/or cloves to the pot if I have them.

    Meanwhile, whip heavy cream with a little powdered sugar and some vanilla (like 1c heavy cream, 1tsp vanilla, 1-2Tbsp powdered sugar) until stiff peaks form.

    Top warm poached pears with the vanilla whipped cream. SO good!

  • My mom used to make this for us as kids and I recently made and had forgotten about how awesome it was. We just call it Goop. You can either make it sugar free or regular. (My FIL is a diabetic so he loves this stuff)

    1 sugar free angel food cake

    1 cherry pie filling (I found this sugar free at Walmart)

    1 large packet of sugar free vanilla pudding

    1 sugar free cool whip

    In a mixing bowl mix up the pudding according to the package. Then add the cherry pie filling. I usually make this the night before so it has had time to sit in the frisge.Divide the angel food cake in half. In a trifel bowl tear up half of the angel food cake in pieces. Layer have the cherry mixture on top and then layer half of the cool whip. Repeat again with the other half of cake pieces, cherry mixture, and cool whip.

    ETA: Also if you don't feel like making a dessert La Baguette has a wonderful fruit tart. It really is awesome!

  • I do something similar to Ami--angel food cake (or cinnamon crumb cake), torn into pieces. Toss it at the bottom of a trifle bowl. Add fresh berries on top of the cake (strawberries, raspberries, blueberries, etc.). Then add homemade whipped cream on top of that. Then repeat one to two times until the bowl is full or you run out of ingredients.

    So good. And if you get the splenda angel food cake (Crest has them, I know), it's fairly healthy.. minus the whipped cream part. :) But that has calcium, so who cares.

  • My grandma makes this awesome dessert called Strawberry Monster. I'll post the recipe when I get home (I don't have the recipe here at work.)

    He's particularly fond of blueberries and peaches, and hates angel food cake, unfortunately. 5thofJuly... I'm going to have to try out those pears whether I make them for his bday or not!

  • Oh---another thing to try if he loves peaches. Buy a jar of mango chutney (at the grocery) and halve the peaches. Put the chutney in the peach halves and place on the grill for a few minutes. Top with really good vanilla ice cream!
