stand by group pleasing dinner?
Does anyone have any ideas for a sorta quick or low matinance dinner that I can make?
No one that's coming over is a vegetarian.

jumped ship to the new and improved nest. back to TB for baby boards.
lasagna sounds delish.
but so does grilled chicken, asaparagus, something else. like rice or potatoes of some sort.
and dessert.. don't forget that!

A more summery version would be a baked potato bar with baked or grilled chicken. I like jenn's taco bar idea.

Okay - I need to know what lasagna recipe you ladies recommend that is easy!
I always get overly ambitious with lasagna and end up with dinner 6 or 7 hours later.

I'm going to make it the night before, throw it in the fridge then bake. It saves a ton of time that way.
Do you make it all from scratch? I'm intrigued. Actual baking time of the one that took me 6+ hours was only 1 1/2 hours. Everything else was making sauce from scratch, boiling noodles, making bechamel, etc.
I sorta make it from scratch. I use jarred sauce instead of making my own, but it's close enough that I'll call it scratch.
I don't have a real recipe and it's not authentic, but this is what I do:
1lb mild italian sausage
1 jar marinara sauce
1 tub ricotta cheese
shredded mozerella
shredded parmesan cheese
1/2 onion diced
garlic, chopped
italian seasoning to taste
1 package of uncooked lasagna noodles (I like using fresh)
Brown the onion and garlic, add the sausage and cook. Add marinara sauce and warm though.
mix the parm, ricotta and italian seasoning together in another bowl
get a 9x13 pan
put a tiny, tiny bit of the meat sauce mixture in the bottom of the pan so that the noodles don't stick to the pan
then layer noodles, sauce, ricotta cheese mixture and mozerella cheese
repeat till all the noodles are gone, but make sure that you end with sauce and cheese
cover tightly with foil, bake at 425 for 1 hour, then remove foil after 1 hour and bake for 15 more minutes to brown the cheese
it shouldn't take more than 30 minutes to make the lasagna and then the 1 hr and 15 min to bake.
If this is your idea of a stand-by meal, then I may just show up at your door one day unannounced
