  • I'm making chicken stir fry. Cut chicken tenders with green peppers, mushrooms, oinions, broccoli over rice. Super easy plus it makes a lot.

  • GAH. I thought I posted. Stupid nest.

    Anywho, I'm making PW's Sherried Tomato Soup. I add some garlic and parmesan to it while it's cooking, and leave out the chicken gloop. I also cut the sugar and butter by more than half. I did a calorie calculator for it, and with 10 servings (it makes way more than 6), it's 252 cals/serving. That's making it with the heavy cream. DON'T try to substitute half and half. It's not the same. I usually eat it with garlic bread and salad. It's a nice light soup for summer.

  • I'm thinking it might be a spaghetti and meatballs kind of night.

  • DH will probably be working late so I'm thinking about getting a pizza. I guess homemade pizza could be made to be somewhat healthy? Stick out tongue
  • We are probably having scrambled eggs and waffles - probably not super helpful on the healthy front.

    except minus the parmesan, with tricolor rotini instead of penne and with all broccoli instead of caulliflower.  I thought that the combination of the roasted broccoli and lemony sauce was *really* tasty.  It would probably be yummy with some grilled chicken added for those who need meat in a meal.

  • We're having pork chops, broccoli, and potatoes of some sort

  • We bought some frozen beer battered cod fillets at Sam's this weekend that we're going to try.  I'll probably serve it with a salad and maybe some rice, although I know H is going to want fries or tator tots instead.
  • Crock pot carnitas, and I think I'm going to put them in corn tortillas with avocado, tomato, onion, and cheese.

  • I've got your healthy right here:  going to Eischen's with a few friends for H's birthday. :) Sounds SO good, but I just got back in exercise mode, so I'm dreading the 3000 calories I'll surely consume.
