  • I made chicken cacciatore on Sunday night.  I thought it was delicious!  DH would not touch the veggies (and I didn't even put in any mushrooms!)  He did say the chicken was "delicious!"  High praise from my husband who would probably eat a steak or burger every night if he could!

    I wish I had taken a picture to show you.  It looked so pretty when I took it out of the oven!

  • Have you tried any other pioneer woman recipes? Her blog is really neat, but I haven't tried any of the recipes.

    I made her Perfect Potatoes au Gratin (without the cheese).  It was garlicky, creamy potato goodness!

    Some of her recipes are a little too involved for me though.  Sometimes, I just can't be bothered and want simple!

    I made this chicken crunch recipe and it was sooooo easy and pretty good for the amount of work you put into it.  It also can be modified 1,000 different ways so it's a nice basic recipe. 

  • I made this recipe last week - super easy and very tasty. I added some Parmesan cheese to the crust mixture too.

    BUTTERY-CRUSTED BAKED TILAPIA 
    4 6-oz boneless tilapia filets
    6-8 Ritz crackers, crushed
    1/2 teaspoon seasoned salt
    1/4 teaspoon chili powder
    1/4 teaspoon adobo seasoning
    2 tablespoons unsalted butter, cold
     
    Arrange fish on a lined baking sheet. In a mixing bowl, combine crushed Ritz crackers with seasoned salt, chili powder, and adobo seasoning (use clean hands to mix).

    Cut butter into 6 equal pats. Place one pat a piece directly on the center of the tilapia. Cut remaining 2 pats into pea-sized pieces and mix by hand into cracker mixture. Sprinkle crumbs equally over each tilapia filet.

    Bake in a preheated oven at 425?F for 15-20 minutes, or desired doneness.

  • In the oven currently is my homemae bbq ribs:

    • I use pork rub on the pork ribs and then put them in the oven for 2 hours at 300 degrees. 
    • After it cools I will marinate the ribs in BBQ sauce overnight in the fridge. 
    • Next day grill the ribs for about 10-15 minutes. 
    • Then Enjoy!

    Today I will lazy and short on time so the ribs will only marinate for 3-4 hours :(

  • I got crafty last week when I didn't have any idea what to make, and it was a total success!

    I grilled chicken in a pan with Kraft Light Zesty Italian dressing, and cooked up some Barilla Plus spaghetti.

    Then to the pan with the chicken I added red, yellow and orange peppers, summer squash and zucchini...plus a little extra dressing.

    I drained the pasta and put it on a platter, then topped with it the chicken and veggies and sprinkled feta and asiago cheeses on top

    so yummy!!! and soo easy
