Easy recipes needed

Hey girls.  I am not a big cook.  DH has cooked three or four nights this week.  He does get home from work earlier than me..but goes in earlier too.  I would like to cook some though.  Do you guys have any recipes that are not too complicated?  We like chicken and beef. We have a third of a cow in our deep freeze so I would like to use that up.  I don't know if I have ever cooked fish but am willing to try.  I'll take ideas for side dishes too.  We have some spices and ingredients around the hosue.  TIA

  • 2 chicken breasts, cooked and deboned1 (10.75 ounce) can condensed cream of chicken soup1 (8 ounce) container sour cream1/2 cup butter40 buttery round crackersDirectionsPreheat oven to 350 degrees F (175 degrees C).Chop chicken into small pieces and place in a 9 x 13 inch baking dish.Mix soup and sour cream and pour over chicken. Dot with butter or margarine. Crumble crackers finely and put on top of chicken mixture. Bake at 350 degrees F (175 degrees C) for 30 minutes. This is a SUPER easy recipe that I tried the other day.  It is decent for how easy it is.  You can also add peas, carrots, mushrooms, anything you like to jazz it up a bit.
    For sides my quick easy sides are baked potatoes, corn on the cob, and fruit salad (I keep cut up fruit in the fridge so I can just make a little fruit cup on the side each night for dinner).
    Another good side is to boil potatoes until they're soft, put them in a baking dish, put bacon bits and shredded cheddar cheese over them, and bake until the cheese is melted.  Then add sour cream when serving.
    Or put asparagus in a baking dish and sprinkle with olive oil, then parmasean cheese and bake in the oven.

    Tacos/taco salad,- old el-paso has a super easy recipe, right on the box!

    Burgers are always easy.

    We do chicken caprese - chicken, tomatoes, peppers, mozz. cheese, and an oil/balsamic sauce 

    We do pasta with meat sauce and make our own meat sauce - easier than it seems.

  • Chicken Teriyaki- We grill it or cook it in a frying pan with the marinade, and serve it with rice and a veggie.

    1/2 cup soy sauce1/4 cup firmly packed brown sugar2 tablespoons vegetable oil1 teaspoon ground ginger1/4 teaspoon black peppergarlic cloves, mincedboneless, skinless chicken breast halvesMix all the ingredients then add the chicken. marinate for minimum of 4 hours, but DH and I do it at least over night if not for a few days. It's some of the most tender chicken I've ever eaten. We even had it for my bridal shower. PorkChops Abracadabra- Cooks in the crockpot for 8 hours on low, then we just serve it over rice and a veggie.4-6 pork chops1 can cream of chicken soup1 can chicken and rice soup1 small bottle of BBQ sauce Brown the chops on both sides(but don't cook through). Mix the soups and BBQ sauce in the crock pot then add the pork chops. Cook on low for 8 hours or on high for 4 hours. 

     Chicken Riggies- a easy one pot meal...

    4 boneless skinless chicken breasts

    1 pound of riggatoni pasta

    1 jar alfredo sauce (we use a roasted red pepper one)

    1 jar salsa (what ever spice level you want)

    Boil the pasta according to the box and drain. In the same pan, cook the chicken (cut it into cubes either before or after cooking). Add the noodles back into the pan with the cooked chicken and add the Alfredo sauce and salsa.  Heat it back up and serve.

     

    Italian Sausage Casserole- This is a recipe that you could make a day or two ahead of time and just pop it into the oven when you get home from work..

    4-6 Italian sausage links

    1 box rice-a-roni

    1-2 jars of pasta sauce (my mom uses Ragu for this recipe)

    2 cups of Mozzarella Cheese 

    Take the sausage out of the casings and cook though & set aside. Leave the grease in the pan and cook the Rice-A-Roni (my mom uses chicken flavor) in the same pan that you made the sausage  in and follow the directions on the box. In a 9x13 pan mix the rice, sausage and pasta sauce together. Sprinkle the cheese on top to coat. You can put foil or a lid on and leave it in the fridge for a day or two. Then bake it on 350* for 45min-1 hour. Serve with crusty bread.

  • We do stir-fry once a week. H cooks up cut chicken and then throws in some spices, sauces and frozen veggies. We also typically have pasta of some sort once a week.

    During the school year I try to make recipes out of a freezer cookbook- it has a lot of make ahead then freeze for later recipes and some cook once but have 2 meals, where we'll cook one that night and freeze the other one. It was nice when we had the basement freezer full- we'd just grab something out of it that night to defrost and we'd heat it the next night. I have to work on getting some more made though as right now we only have one lasagne pan and one container of red sauce left.

  • Some easy recipes that we make a lot:

    Stir-fry
    Tacos
    Grilled Sausage
    Spaghetti (homemade sauce that is INSANELY easy)

    if you want to try making a fish, this is a really easy recipe (also check the Tasty Tuesday post - I mentioned another easy fish recipe)

    Tilapia in a Honey Soy Sauce

    3 tilapia fillets
    2 Tbsp honey
    2 Tbsp Soy Sauce
    2 Tbsp balsamic vinegar

    Wisk together honey, soy cause and balsamic vinegar. Marinate tilapia in sauce for about 20 minutes in the fridge. Bake at 350 for about 15-20 minutes.

    We usually service this with rice pilaf and a veg.

  • Do you have a crockpot?  I have some really easy recipes that are delicious.  

    I have a couple of tricks for using the crockpot.  I tend to cook the food overnight.  I start it right when I go to sleep and turn it off when I wake up.  I don't like it on all day when I am at work and I am normally out longer than the food needs to cook.  Also, when cooking chicken (and I only use boneless, skinless breasts), I now do not defrost it or only partially defrost it.  It keeps the chicken moister, which DH appreciates.

    My recipes:

    Pulled chicken or pork: Pour bbq sauce over the meat and cook on low for 6-8 hours.  You can just pour in your favorite sauce, but I like to thin it with water and then add in some hot sauce and brown sugar.  Serve on rolls with baked potatoes, french fries, or corn.

    Rotisserie (like) chicken:   Buy a rotisserie spice mix at the store.  Sprinkle desired amount on the chicken.  I add a few squirts of lemon juice.  Cook on low for 6-8 hours.  Do not add water and any liquid.  Serve with baked potatoes or rice.

    Pot roast: Put roast in pot, partially defrosted is best.  Get lipton onion soup mix.  Combine soup mix with 1/2 cup red wine and 1/2 cup water.  Pour over roast.  Cook on low for 6-8 hours.  You could probably add onions, carrots or even potatoes (you may need a little more liquid) but I have never tried it.  Serve with baked potatoes or egg noodles.

  • Thank you girls!!!  I have lots of recipes to try now.  I do have a crockpot (it was actually DH's before we got married.) I have only cooked buffalo chicken dip in it 2x.  DH has used it a few times.  I am always unsure about leaving it on while at work too although DH gets home earlier than me so it might work out.  I need to go to the store to get ingredients and try some of these.  I will let you know how they turn out.
