I only had ground turkey left in the freezer this weekend, and wanted enchiladas. I raided my pantry and the following deliciousness ocurred.
1lb ground turkey
1 can of rotel (I used mild)
1 can of corn, drained (I used green giant sweet niblets)
1 can of green chile enchilada sauce
Tortillas
Cheese
I browned the turkey in a skillet with the whole can of rotel and 1/2 can of sauce. Once the turkey was cooked, I added the corn. I then wrapped the mixture into tortillas, folded and placed in a baking pan. I topped them with the remaining enchillada sauce and cheese. I broiled it just to get the cheese all melty and bubbly. Then topped with lettuce, guac, salsa and sour cream. (you could add tomatoes, olives, etc whatever to your liking.)
It was soo good, I think I'm going to work it in as a regular. I figure with wheat tortillas and low fat cheese/sour cream....it's pretty darn healthy.
